I just had to post when I got home from school tonight because I had a HUGE surprise!!!!! My friend, Cathy, baked me a vegan chocolate birthday cake!!!!!!!!
I walked into class tonight to find balloons, my cake and a card at my spot and almost cried because the cake is SO gorgeous! I had a feeling she was up to something when she borrowed my vegan cupcakes take over the world book last week and she supersized the basic chocolate cake recipe in it to make a large cake, then she used the buttercream frosting recipe in it to decorate. She is so incredibly talented, making my Dexter cake—she made Dexter out of rolled fondant colored with food coloring. How amazing is that?!! Of course I helped myself to a large slice and shared with my class and a couple chef instructors. Everyone gave it rave reviews and no one could tell of course that it was a vegan cake. I still have about half a cake left and I wish you all lived closer so you could come share this yummy dessert with me! I think this definitely goes down as my highlight of all of culinary school….I feel like a very lucky girl 🙂
And of course, the croquembouche aka monstrosity that we assembled tonight. Yeah………it was destroyed at the end of the night (no one would ever want to eat this!)
(Chef Erin, you look so cute! haha)
