A First For Ryan

Good Evening!

I was pretty productive this afternoon, if I do say so myself. However, I still didn’t get everything on the to-do list done so that means it carries over to tomorrow’s list!! I know living in 2009 we have all these fancy shmancy technological organization tools but I always write my to-do list out every night in ballpoint pen on a yellow legal pad. Stick to basics, folks. Stick to basics.

Midway through the afternoon I snacked on a Dr. Kracker with Naturally More and another slice of watermelon (I’m addicted):

And then a little while later I took a juice break! I used all of the below to make a delicious concoction:

organic carrot, beet, celery, ginger and apple-–My favorite!

And then for dinner I made something I rarely make—lasagna!

And what a lasagna it was, let me tell you. I will say without a doubt that it was, in fact, the best lasagna that I’ve EVER had. I think Ryan was initially a little disappointed because of the lack of meat but he got over it really fast after the first bite. I used this pasta sauce in the dish ’cause I was too lazy to make my own today—

And then I added creamy layers of part skim ricotta cheese, salty kalamata olives, mozzarella cheese and spinach. It was quite divine! I won’t be revealing actual recipe at the moment since I’m saving it for a little project, but you will all find out in good time. 😉 Trust you me, this one is worth the wait!

If that looks like a little bird portion that’s because it was. Don’t fear, I totally went back for seconds and Ryan went back for THIRDS! Can you even believe it was his first ever vegetarian lasagna??! Even after two platefuls I didn’t feel heavy in the least bit because this dish was so, so light. To drink, I had a cup of decaf black tea with vanilla.

And then for dessert, I just had to try one of my new mint “oreos”—

Holy grapefruit (where did that come from?!) this cookie was freakin’ amazing. Totally brought me back to my college days youth where I would go to town on the mint oreos. 😉

I am exhausted! Bout to hit the tub then the bed and have another packed day tomorrow. See you in the morn’!

    The lasagna looks delicious and I’m glad Ryan liked it, even though it didn’t have meat! I struggle with my husband on this too since he’s such a “meat and potatoes” kind of guy, but I think this might win him over!

    HOLY A-MAZING-NESS! That lasagna sounds flipping awesome! Hmmm…. what could the future project be? I love surprises!
    I think I’m going to have to stop by the Village Health Market tomorrow for a juice! Yours sounded so good!

    That juice is exactly what I am craving right now!!! Too bad I don’t have a juicer and can’t get in the car at 9:45 to go to the health food store. Although the cookie looks pretty good, too 🙂 My favorite thing is to put those chocolate mint faux-oreos in the freezer — totall reminscent of a girl scout cookie!

    Been reading for a while- love all your recipes and tips! I got a breville a few months ago and love it, but have never juiced ginger because I just don’t know how much to put in- it is so hard and doesn’t really seem amenable to juicing. how much do you use?

    Wow! I love that veggie/apple smoothie. After drinking salad smoothies for a month that looks much tastier and still just as healthy. I still love all the ideas i get from your site. Thanks for sharing.

    Mmm awesome lasanga! I’m also loving the mint newman’s o! Aren’t Newman’s Own Organics products amazing? Love ’em.

    I also firmly believe in writing out to-do lists by hand. It’s so much easier and it’s tangible.

    I am the exact same way… I HAVE to write out my to-do lists on paper. Somehow, it’s just so much better that way! 😉

    I’m loving the PB on the Dr. Kracker. I’ve never tried adding anything onto those cracker just because they seem so loaded already, but that PB sure looks yummy on there!

    What a great smoothie mixture! I’ve got to try that one out!

    Awesome job on the lasagna! Definitely a “make-again” recipe! 🙂

      No, the don’t fill me up at all but I just drink them like I would drink tea, not for an actual “snack”. I always have something else with them!

    Wowwee, your lasagna looks out of sight. It sounds like you are gentle incorporating more veggie options into Ryan’s diet. 🙂

    I agree that nothing beats a pad of paper and a pen for a to-do list. I’ve never owned a palm pilot or Blackberry. A good old datebook has always been my personal secretary.
