Reason number 9999999 why living with your parents rocks:
While I was at yoga, my mom took my leftover hunk of wild Alaskan salmon from the other night and made an AMAZING salmon salad with it for me to eat when I got home!!! She wasn’t there when I arrived, so of course I called her and asked her how she made it because it was sooooo yummy!
She took my leftover salmon piece (probably 5 ounces of cooked salmon) and flaked it with a little diced avocado, a little chopped onion, a drizzle of extra virgin olive oil, a squirt of fresh lemon juice, sea salt and pepper. Delicious! I ate it over lettuce with crumbled blue corn chips (last of the bag!) and watermelon. This was seriously the best lunch ever! Thanks mom! 🙂
This morning I took a wonderful hour walk by the bay and it was really, really great. I think I’m going to *try* to make the commitment to walk like that on all my non-running days. It really clears my head and starts my morning on the right foot (no pun intended bahaha). I had some cheese and Mary’s crack for a mid-morning snack before heading to the studio to work a bit before my class.
Why are these mini brie cheeses so good?! Why, why why????? Must go to Costco soon and restock. Apparently other members of my family love them as much as I do 😉
Yoga was actually NOT Bikram this morning, it was a 90 minute hot flow. Think dripping sweat and chatarunga-ing for an hour and a half. Good stuff….I feel like grape jelly right now.
I have a 40% coupon for Borders that expires at the end of the day….I think I might head over there now!

September 7, 2009 at 3:07 pmWow, that salmon salad looks out-of-this world- salmon + avocado + lemon is such a great combination. I’ve had salmon salad with canned salmon. but never thought to mashed up a leftover fillet. I will definitely try this the next time I have leftovers. Go your mom!
Hope you find some great stuff at Borders!

September 7, 2009 at 3:09 pmThat salad looks amazing. I eat a ton of tuna, but I never thought to make a salmon salad. Also, do you like the hot yoga better?

September 7, 2009 at 3:14 pmAfter being home this weekend and having my mom’s pantry and fridge stocked full, not to mention all the fabulous meals she cooked, I kind of wish I lived at home :).
I’m excited to see what you pick up at Borders. I am looking for a good read.
Have fun!

September 7, 2009 at 3:17 pmhaha that salmon salad should definitely top the list of why living with your parents rocks! when i’m living at home i refer to my parents as my “roommates”–it’s much cooler that way 😉 glad you had a great walk and yoga class–enjoy the rest of your labor day!

September 7, 2009 at 3:32 pmI love those mini brie! The portion control is great since I can eat a ridiculous amount of cheese in a sitting if I’m not careful!!

September 7, 2009 at 3:35 pmI LOVE salmon salad! Especially kinds without mayo. 😉 I’ve never tried avocado, though, I’ll have to try it. My fave combo is diced apple (or dried cranberries!) and walnuts.

Cynthia (It All Changes)
September 7, 2009 at 4:34 pmI wish we had costco nearby to try these. I might have to see if our BJ’s has something similar.
Any kind of yoga that makes you feel like jelly is awesome! I can’t wait to try Hot Yoga when I go to Colorado next week. My studio here doesn’t have that option.

September 7, 2009 at 5:13 pmLong walks are fantastic head clearers! Aw your mom is so sweet for making that for you. My favorite part about living at home? Laundry. I hate doing laundry and, thankfully, my mom does it for me 🙂

September 7, 2009 at 5:26 pmYou know, it’s really awesome that your mom is into healthy cooking and eating, too. So many parents weren’t exposed to the same info we’ve been exposed to, and they’re just not as interested. Go Jenna’s Mom!
Kristin (Kristin's Nibbles)

September 7, 2009 at 7:10 pmWhat a sweet Mom you have.
Sounds like you had a pretty intense yoga session; I can definitely relate with the noodley leg feeling. When I walk home from yoga in the morning, sometimes I feel as though I have no control over my legs!

I do Pilates, but think that yoga would help with some of the knee and hip problems I’ve been having. Do you know of any good yoga DVDs/podcasts/etc that I could try?

September 9, 2009 at 11:33 amCan you PLEASE, PLEASE, PLEASE, start posting what you buy when you go to Costco!? I just recently got my membership and have the basics down (almond butter, hummus, cheese, produce, etc) but am so worried I am missing totally awesome stuff in all those massive aisles!
Total side note: I also just found new windshield wiper blades there (Costco), totally the expensive ones for only $8 a blade instead of about $20, totally necessary for living in FL.

September 10, 2009 at 9:37 amI am totally getting my eat, live, fix right now!! Ive been w/o a computer since last week(its been tough ;)) but I was wondering, what’s the name of those crackers you had with the brie…they look fabulous…
