A Sweet Date

Hi guys! Happy Monday to you!

Last night’s sleep was very disturbed….one of those nights where you just wake up every 10 minutes and look at the clock. I hate that! Every minute ticking down was a minute closer to my alarm going off at 3. Bah! Surprisingly though, I’m not very tired today….weird since I’m sure I only got 4 or 5 hours of sleep last night. Must be my awesome eats?! 🙂

This morning I had a date!

I also had a kashi protein bar while driving to work. I actually really like these bars because of the chew. It takes me like 10 minutes to eat this and I was full for the next 4 hours!

Breakfast this morning was delicious overnight muesli

Very very VERY filling! A combo of 1 Voskos (8 oz) and 1/2 cup muesli that sat overnight in the fridge. This morning I added sliced strawberries, almond butter and raspberry preserves.

I got home a little late from work but had a plan to try a tempeh sandwich….I got the idea from Kath’s tempeh and pumpkin butter sandwich as well as Miss Gliding Calm’s tempeh that she broils until crispy. It was incredibly to throw together and was tasty actually! I used 1/4th of the plank of tempeh and broiled it on high for about 4 minutes on each side. Could have gone longer but I was starving! Then, I sandwiched it between a toasted Arnold’s Sandwich thin with a hot gooey piece of pepperjack. Slap on some ketchup and you got yourself a filling sammie!

I also had an orange plucked straight from my brother’s friend’s tree—

And I washed it all down with an ice cold glass of coconut water

So, I was totally planning on not running all week to rest my shins completely before starting to train again, but I am really really really trying to persuade my 18 year old brother to train for a 5K with me (and I just wanted to test out my new gear…let’s be honest) so we are going out for a 1 mile jog together. Afterwards, I plan to do some yoga to stretch everything out.

Got on my compression socks and I’m ready to roll 😉

    I’ve been seeing a lot of this coconut water… makes me want to try it! I’ve got my eyes out for tempeh too, but I’m much more excited to make some seitan!

    I love tempeh. Don’t know if someone already mentioned this before, but up here in Gainesville we have two local tempeh makers! If you’re ever are up this way you should check it out. You can buy frozen blocks at the local grocery store Ward’s and many restaurants have it in dishes as well. It is totally awesome that our small town has this, but I must say, I do prefer the taste of Art’s tempeh over Jose’s. One last thing, have you heard any rumors about a Gainesville Greenwise? Fingers crossed.

    That tempeh looks really good – I see it all the time, but never buy it at Whole Foods. I’ll give it a go soon! Don’t you love that feeling when you just REALLY have the urge to run?

    Grr, sorry bout that restless sleep (I was so the same way last night!)! Your eats definitely could keep a person happy and satisfied, though. The tempeh sammie looks fab! Hope the new running gear works well!

    I love those Kashi Roll bars as well, but talk about a workout for the jaw! I’ve been wanting to broil some tempeh as well since I saw it on Gliding Calm’s blog. I love tempeh, and I bet it tasted great with some melted cheese.

    I haven’t tried those Kashi roll bars yet, but they do look delicious and if they are able to keep you full for 4 hours they must be decent!
