A Sweet Success!

I am very relieved that last night went even better than I anticipated!!!!!

We were able to finish all the last minute nit-picky work and open the doors at 8:00, when at least 100 people bombarded the room! We did very well not only on our product, but also on our presentation because we got a little creative with the shaved dark chocolate on our white tablecloth. 😉 On our display you will see almond macaroons sandwiched with raspberry jam, linzer cookies with raspberry jam, dark chocolate covered petit fours, petit eclairs, Opera torte pieces (sort of like a tiramisu but made with a coffee rum glaze and french coffee buttercream frosting) and pink and yellow battenburg torte pieces. My dad tried one of everything and loved it all, but he said the Opera torte was his favorite (that was everybody’s favorite!). He had never really been in my school before so I gave him the grand tour and he met my chef instructors and my classmates. All in all the evening was a great success and we got out early, around 10:30! Tonight I have to take 2 written tests and we have to do our deep clean of the classroom….then that’s it! The next three weeks I go to Cakes class!

My dad had to leave early this morning and I woke up early too, ate half a banana with almond butter, and hit the gym for a lower body workout. I did lunges with weights, squats, kick-backs, calves, more squats, treadmill…all in 30 minutes! When I got back home I made a bowl of Ezekiel cereal with the other half of my banana.

For lunch today I packed 1/4 cup Cedar’s Garlic Lover’s Hummus with a Touflin (sp?) multigrain pita (love these…especially when you heat them up in the micro for a few seconds!), some carrot, celery and red pepper sticks and an orange. For later on, I packed a sliced mango and some pecans.

Wow Jenna, everything you and your group made looks incredible! You guys really look like professionals, everything looks mouth-watering! Your lunch looks delish as well, I almost always have sandwiches or wraps, but sometimes my favorite way to change it up is to just cut up a bunch of raw veggies, have some crackers, hummus, and a few other things. YUM! Have a great day!

Jenna, do you always have to do “presentations” like this, or was this something special for the pastry class? i.e. where outsiders come in and taste the food? Seems like a really interesting way to end a class.

AHHH! The opera cakes look awesome! (Could the mentioned tiramisuesqueness have anything to do with it? HMMMM!)

Baking seems like such an intimidating thing to me, but your posts are quite inspiring. Amazing job on the pastries!

    BethT,

ive never done that before…it was something special just for this particular class. I’m sure I will be doing it again in the future for some other class (hopefully!) because everyone loves it!

    Becky,

I just peel the mango with a vegetable peeler and then slice it into four large slices which I then slice into thin strips. I believe Kath has a video on her blog on how to properly peel a mango so I would check that out as well. It took me a long time actually to slice it right because they always ended up as mush for me too…and I LOVE them!!!!!

    To all,

Thank you so much for all your sweet comments!!! I don’t think anyone in my class really wanted to eat any of this stuff because we have labored over it for many many hours and, actually, the thought of a petit four right now makes me want to gag just because I’m so sick of them!! Those tiny little cakes took 2 days…a total of 7 hours to prepare. Trust me when I say you don’t really want to eat one after that!!
