Happy humpday!
I’m counting down….tomorrow is my last day of work and last night of school before spring break!!! So today is sort of like my thursday I guess :). Last night in school my chef instructor wasn’t there because he was sick (everyone in school is coming down with colds, I’m keeping my fingers crossed I’m not next!) so an associate chef took over for the night. Instead of making apple strudel and spanokopita, which we now doing tonight, we made little brioche buns, fruit tarts and napoleons using phyllo dough and fresh fruit. I love using fresh fruit in desserts and was excited to see that we had an array of blueberries, raspberries, strawberries and kiwis to use last night.
I got up early this morning and hit the gym for a quick total body circuit. I did lunges, squats, pushups and some various arm machines for about half an hour. Before I left I had my usual half of banana with peanut butter and when I returned I made a delicious waffle sandwich using the other half of my banana with more peanut butter (!) and raspberry preserves.
I thought I would share with you all my packed lunch a little early this morning because I won’t be able to take pictures today at work around lunchtime because we are having our monthly cooking class at Roy’s today so the restaurant will be filled with people….not really photo conducive for me! I was going to bring leftovers from last night but then thought I would rather have it for dinner again so instead I made the classic: a spinach, honey mustard, tofurkey sandwich on Ezekiel bread with strawberries and grapes on the side! Strawberries were on sale the other day at Whole Foods so I just HAD to buy some 😉

They do have lids and no, they are not heavy to carry at all for some reason! And they work great in the microwave as well. I’m sort of obsessed.

Oh, and I thought I would mention that your blog inspired me to try the tofurkey deli slices on a sandwich… and I loved it! Will certainly be one of my staples now.
Yay for spring break! Today is my last full day in the office for the week as well, I’m off to Seattle for a long weekend. Enjoy your spring break!

I made ED&BV chocolate/pnut butter cookies last night and I only had whole wheat flour and they turned out exermely dry and crumbled?? is it b/c of the flour? Also, do you use the parchment paper when you bake them?? I have been but lately it has been smoking up my oven! and smelling like my cookies are burning even though they are not?

I have been getting them from Farmers Market recently and they are amazing but I was too sick to go this past week. Boo. I am crossing my fingers you dont get the cold or flu that is going around. Also, the Ezekiel bread—I have a question. I eat it too, love it…but mine looks different than yours…may be the picture…I eat the 7 grain…it looks like you have the seeded one…I can’t eat whole seeds due to diverticulosis…I was wondering, if in fact you eat the seeded bread, are the whole seeds just on the outside of the loaf or are they inside the loaf (whole) too?
I’d like to try the seeded one, could knock off the seeds if they are just on the crust….
Also, I recently tried the Ezekiel english muffins after seeing them on your blog…they were wonderful!

Does anyone know of any Gluten-free breads that taste good? I am afraid to try rice breads and have found buckwheat bread, but it is so dense and it is nice to have a fluffy sandwich. I have settled for gluten free waffles for now – they are airy and nice not too dense.

Oh, and that photo of your breakfast is probably the greatest looking pb&j picture I’ve seen. Looks sooo yummy!!
