Isn’t it fun how it’s already humpday?! Feels good. Last night in school we did a lot but I don’t have photos because nothing is considered finished until tonight. We made vanilla cream bavarians, fruit bavarians (we used black current) and a baked apple charlotte. I’ll take pictures tonight when we unmold the bavarians and the charlotte. Hopefully it will turn out well!
Unfortunately I didn’t go to the gym this morning because I slept horrible last night. I just couldn’t fall asleep for the life of me! I got home at a reasonable time, 11:15, took a shower and got to bed around 11:30 or so but just laid awake until 1:30. Then, Dexter had me up at 5:30. I still woke up at my normal time of 7:00 but I just didn’t have the strength to go to the gym. Boo. Oh well! I decided to make some creamy stovestop oatmeal instead using a banana, 1/3 cup oats, 1/4 cup wheatberries, maple syrup and peanut butter. I rarely make oatmeal on the stove anymore just because I don’t have enough time but this reminded me just how delicious it is when you take the time to do it!
For lunch today I packed a yummy veggie-stuffed hummus pita. I stuffed a Touflin multigrain pita (my fav!) with 1/4 cup hummus, half of a red bell pepper, some spinach and cucumber slices. Alongside it I packed a juicy red pear and some peanut butter pretzels for a snack.

Are you spelling that pita brand correctly? I tried to look it up becuase the pita I like is no longer being distributed to my grocery, but the only thing that popped up when I typed the name in was your website?

I’m not Jenna, but I can tell you that the pita brand is actually named Toufayan (and they’re good!) http://www.toufayan.com They’re available all over FL, because they are made here, but I’m not sure about distribution elsewhere.

Hahah~I rarely cook my oatmeal on a stove either ’cause I just get tired of waiting for the water to boil! But I agree–the oatmeal is WARMER and creamier when you take the time!

These pretzels are just unsalted all natural peanut butter filled pretzels by a brand called “pure taste” I believe? I found them at whole foods and have never seen them anywhere else. They do fill me up because of the peanut butter…the reason they might not fill you up (or a banana with pb for that matter) is because you might not be using enough peanut butter. For a snack I usually use a tbsp of peanut butter and combined with a fruit or a whole grain I find it very filling. A thin smear though would not be filling. I like peanut butter so much I sometimes eat if off the spoon…haha!
