And Then I Ate

Good evening 🙂

I’ve had a pretty productive Saturday in terms of getting all my errands done and watching Ohio State kick some booty. Naturally, I’ve also been a hungry beast all day and ate lunch at literally 10:50 because I couldn’t take it anymore. I had a hummus, turkey and laughing cow sandwich on Ezekiel bread with blue corn chips and watermelon!

I don’t know who I am but I’ve seriously been on a coffee kick lately. I go back and forth between tea and coffee and right now for some reason, I’m all about the coffee! I got a double shot skim latte while running errands and snacked on my favorite bar ever!

I don’t know if you saw my tweet about being stuck in a dress in a Target fitting room, but yes….it totally happened! Such a cute dress too and it just screamed Northern California but oh well…it’s clearly a sign when you don’t know how to get it off! hahahaha It was a $24 well saved.

Since Target is attached to Whole Foods (could they GET any crueler?!) I made a pit stop to pick up a few groceries:

  • coconut milk
  • naners
  • PEANUT BUTTER AND JELLY LARABARS!!!
  • tofu
  • tempeh
  • wild salmon
  • microbrews!
  • super on sale almond butter
  • bunny snacks to try out on my next long run
  • cereal
  • goddess dressing

SO excited that pumpkin ale is back out!!!!

Haha I like how I drink a beer while wearing a La Crema shirt. 😉

And for dinner, I made EXACTLY what I was craving—–salmon!!!!!

I made the most phenomenal dinner with pan seared salmon, roasted brussels sprouts and pureed butternut squash. I felt like I was at a restaurant! For the squash, I actually roasted a huge butternut at 425 for 60 minutes and then peeled it and whirled it in the VitaMix with a little coconut milk, cinnamon, cloves, sea salt, cayenne and a squirt of agave. It was soooooo good.

Salmon is actually my favorite dinner to prepare for myself at home. One of my greatest pet peeves is when you go out to a nice restaurant and they totally KILL the salmon by overcooking it. Salmon is meant to be medium rare and I think its best served simply: seasoned with sea salt, cracked black pepper and seared for about 5 minutes per side in olive oil. It’s just sexy. Yes, I did just call a fish sexy.

Okay, okay, I’m done!!! 😉 (sigh of contentment) Was just g-chatting with AnneP and we both agreed that running long distances makes us very tired and that all the cool kids stay at home on Saturday night, read and go to bed early. I might even be in my pajamas already. You never know.

On that note, I must bid farewell. I’ve got a bit of a headache from not hydrating enough yesterday and am calling it a night.

    Wonderful dinner! The salmon looks great, and I love brussel sprouts, such an under appreciated vegetable! The pumpkin ale looks delicious, was it really sweet?

    I don’t like salmon at restaurants either for the same reason. I tried some the other week just to give it a second chance and it was way over done. I’ll stick to cooking it at home.

    I love staying in after a great day. So what if it makes me old 🙂

    Target and Whole Foods next to each other, they are definetely coniving with each other, but I guess less stops for everyone! Theres just so many tempting things at both stores!
    Love that you eat ice cream right out of the container, I love doing that!
    I love just sitting in my pajamas and watching college football with the hubby on Saturday nights in fal, so I guess all the cool kids do stay home!

    I love pumpkin ale, my favorite is Shipyard from ME. We were in Healdsburg just yesterday 🙂 Love it! So much wine, so little time. We are already planning another trip here for the fall!

    wow I actually bought that same pumpkin ale tonight to bring to a party tomorrow! But Im kind of scared of it since I try to stay away from beers that taste like burnt rice and this one seems to have that look to it. I guess Ill find out tomorrow! And Im totally one of the “cool kids” Ive been in my Pjs for an hour now haha, staying in is the new going out!

    Oh I’ve been to that Target/Whole Foods before.. that is a very dangerous location lol! You can’t go in one, without having to go to the other. Lovely eats girly! Your sandwich sounds like it was amazing.

    Seriously, Whole Foods is an addiction I have just learned to live with. I figure it could be worse – my wallet might not like it, but my body does, and my health is worth the investment!

    Haha I got stuck in a dress one time – a little black dress with a lining. It went on like a breeze but there was NO PHYSICAL WAY to get it back over my head so, yes, I RIPPED THE SEAM to get it off! That’s so unlike me but I panicked!

    I noticed you have sea dog blueberry wheat ale there…I am from bangor maine where the sea dog is located….that is my favorite beer ever! I live in dallas now and I miss it!

    I love the Peanut Butter and Jelly Larabars, its crazy how true to that flavor they are! Definetly one of my favorites! I have always been nervous about trying brussel sprouts as my childhood fear of them has never ceased! What’s the best way to prepare brussel sprouts for beginners?

    you are definitely right about salmon…its ruined when overcooked! seared salmon = divine!

    I am a little jealous…I have not eaten fresh salmon for about a year now as it is ridiculously expensive here in Korea. Definitely look forward to enjoying it when I return back home.

    I totally agree with you about salmon! It’s gotta be flaky and lightly seasoned, not chewy and swimming in butter. That Optimum cereal is also my fave kind 🙂 Hope you enjoyed a nice relaxing Saturday night!

    haha I agree about staying in the night after a long run! I did a 14 mile run yesterday, and was absolutely exhausted by about 8:30. My boyfriend and I were at an outdoor cafe for a drink, and I couldn’t wait to get home, put on my pajamas, eat some Teddy Grahams (you can’t go wrong) and snuggle with our puppy. Excellent night, in my opinion 🙂

    I just tried Southern Tier’s pumpkin ale for the first time – Pumking – and it was the best pumpkin beer that I’ve had, I think!! I think a lot of them smell & taste more nutmeggy than pumpkiny, but Southern Tier gets it just right. 🙂

    I can’t stand when salmon is overcooked. Salmon is one of my favourite foods! AND I just recently realized that brussels sprouts are delicious and not “ewwwwy” like I had thought they were my entire life! 🙂

    That pureed butternut squash looks to die for (butternut squash is my fave fall root veggie)…

    and YAY for PB+J larabars! They keep coming out with the best flavors, I need to try this one- but I don’t know if it will ever top my love for PB cookie Larabars… we shall see!

    I did a long run yesterday and was WIPED all day! I got a dehydrate-y headache too. A giant smoothie in a bowl and copious amount of cold seltzer and water helped.
