Back To The Kitchen

Hi everyone!

I just got back from lunch with my dad and I’m hurrying to get into my chef uniform and head to the kitchen for the rest of the day! This morning I had a great workout at the gym here—I did 10 minutes on 3 different machines (elliptical, treadmill and bike), pushing myself to the max on each one. I love changing up my cardio workouts like that and sweating it all out! After I worked out, I snacked on a plum and read for awhile until my dad got here. We went to lunch at a local sandwich joint that I grew up going to. I got a yummy roasted vegetable panini with roasted eggplant, peppers, tomatoes and basil on a grilled piece of ciabbata bread. I also had an apple (not shown). It was a tasty lunch and I’m bringing another larabar with me for later in the afternoon to save me from eating all that chocolate!!

    This is for Jenna and everyone else. I am wanting to make the switch to vegetarianism, and was wondering what books you could recommend on making the transition easier. Are there any that you found really helpful? I’m also afraid of telling my family.

    Mhh, I wish I had sandwiches like that more often!

    And WOAH you made so many great dishes! If food wasn’t turning bad at some point I’d request you to send me all your leftovers =p

    in regards to your previous post, when I worked at my little baking gig a while back, almond macaroons were one of our specialty. I think I started recording how many I made and it ended up being around 5000. Insane! They’re really good though 🙂

    I’m trying to think of a great book that really helped me….hmm….I think most of the books I read while making the transition were cookbooks actually! I would def. read Fast Food Nation though as well as Skinny Bitch, just for some more info on the meat industry that you might not be aware of. Then, invest in a good veggie cookbook such as a Moosewood cookbook, Veganomicon, or Eat, Drink and be Vegan. Another great resource is the web…seriously! You can learn just about anything on here and reading other peoples veggie blogs have really helped me out a ton, just gaining support and all because it IS hard at first. Changes are always hard but this will be worth it, so you just need to stick it out. If your parents are mad at you…who cares? I guarentee you they will get over it. If this is the biggest deal in the world to them…then you are lucky. I can think of a million things that are a bigger deal than becoming a vegetarian. What can they do? Lock you in your room and force you to eat vegetables? (haha) I’m sure your parents will be more supportive than you think because, despite it all, they love you and want you to be happy. Sit down and talk to them in a mature manner and tell them you are old enough to make your own decisions and you feel this is the best way to live your life. Offer to cook for them so they can see that meat doesn’t “need” to be the center of the plate.

    Wow, you are such an inspiration. How can you manage to do so many things with such a tight schedule! It sounds tough. Your panini sounds marvelous and looks delicious!
