Today was the last day of the Creative and Mindful Cooking Workshop…does that mean I have to go home tomorrow? I don’t want to go home!
This morning we had a chance to work with Kim, the executive pastry chef at Miraval. Kim went to the Cordon Bleu school in Scottsdale, so we chatted a bit about baking, pastry and prune puree, which is apparently a great substitution for butter in some high-fat recipes.
Isn’t she cute? I love when pastry chefs wear pink nail polish.
We had a chance to play with chocolate—
braid whole wheat challah bread—
And learn some of the tips and secrets for healthy desserts. It was awesome!
I should probably go workout now…really, I should.

your whole experience there really seems like a bit of heaven… certainly right up my ally. Don’t worry about working out- you are on vacation. It’s not like you eat multiple desserts every single day…
