Eat Dough and Be Happy

Like I said before….I would be baking today! Except my favorite kind of baking is a little different than the type we do at school (haha). I made Dreena’s “You Got Peanut Butter in My Chocolate” Cookies (from ED&BV) and let me tell you, from the amount of dough I have just consumed, this is the best cookie I have ever had. A rich chocolate cookie (from cocoa powder and dark chocolate chips) combined with creamy all natural peanut butter to form a perfect slice of heaven. Seriously. If they serve these in heaven, sign me up. I haven’t eaten one yet…I plan to bring one to school tonight for a friday-night-practical treat…but I have licked the spoon, the bowl and my fingers quite clean and now feel full. That’s the good thing about vegan treats, right??!! You get to eat the dough!!!!!

Speaking of dough, when it looks like this how can you go wrong?

    I tried making those cookies a couple days ago and I agree that the dough was delicious. Mine got really flat though and burned on the bottoms even though I cooked them at a lower temp and for a little shorter than the time given. Any suggestions or ideas of what I might have done wrong? Thanks!

    I’m not a vegetarian, much less a vegan, but I just ordered that book on Amazon since choc/pb is my absolute favorite combo and that dough looked AMAZING. I’m sure I’ll find some other recipes in there that omnivores can enjoy (or I just spent $17 on one cookie recipe….that I haven’t even tasted haha)

    I made these guys and they are to die for!! Chocolate and PB is a dynamite combo. I seriously can’t decide what my favorite recipe is from ED&BV!! I’m so glad you are enjoying it.

    i use some brand of honey mustard called “Woegers”…its very random. I just buy whatever I find though..I don’t really have a favorite brand. This one is pretty good though although its very very sticky.

    I have NO idea what happened! I made much smaller cookies (so I could have more) and baked them at 350 for 10 minutes and they turned out perfect. Are you sure you got the correct measurements for the baking soda and baking powder? That’ll do it!

    Question — Has anyone tried Whole Food’s vegan chocolate chip cookie? I was browsing through their bakery the other day and saw that they had fresh vegan chocolate chip cookies! Before I buy one to try, I just wanted to know if anyone has had them!? Thanks!

    I AM OBSESSED WITH WHOLE FOODS VEGAN CHOCOLATE CHIP COOKIES!!!!! the ones from the bakery case?!!! They are SO good! I always buy myself one when I’m having a bad or stressful day….YUM!

    I forget who, but someone gave me a great list of book recommendations earlier on and I wrote them all down but could only find French Women Don’t Get Fat at my library. I am going back tommorrow, but cannot find the paper where I wrote them down!     a lot of people like avocados here… if you eat only half an avocado how do you store the other half for later/how long will it last? thanks ๐Ÿ˜€

    Just wanted to second Jenna’s response to the WF vegan chocolate chip cookies. They are sooooo good!!! I was there at lunch today and had to fight the urge to get one. I talked myself out of it because I had one the day before yesterday, but they are so good. And they’re about the size of my head so it takes a while to eat one!!! Try one, 99 cents well spent!

    Yes, EVERYONE should own ED&BV, whether they are vegans or not – that cookbook is amazing, and I’ve loved EVERY recipe that I’ve tried from it. I made those same cookies, but I used carob and almond-butter – they still turned out fabulously!! :0)

    Andrea–usually i’ll eat like only 1/5 of my avocado at a time in a salad or something, so i make mine last about a week or so.
    as long as you keep the pit in, the half it stuck in will be totally fine. with the other side, just piece it back where it came from on top of the other half of avodado (assuming you cut it in half around the pit to begin with). then, i wrap it SUPER tightly in saran and keep it in the veggie drawer. it will definitely turn a bit brown, but it tastes exactly the same. if the brown bothers you, just scrape it off, but really its fine, it just oxidized.

    Those look amazing. I can’t believe you didn’t try one!

    Andrea – be sure you store the pit with the rest of the avocado – it helps keeps it from turning brown. I just leave what’s remaining in the shell, stick the pit back, and put the whole thing in a small container with a tight lid. You can also squeeze a little lemon juice on it, although it will break it down a little. Or just make guacamole ๐Ÿ™‚ It’ll be gone before you know it.

    Jenna and Courtney B, I am also obsessed with the Whole Foods vegan chocolate chip cookies! I am not a vegan at all but they are beyond delicious and don’t leave me all full and gross feeling like some baked goods. You must try one!

    I like the Kraft brand honey mustard… SO TASTY!!! not sure if any are the ingredients are sketchy since it is Kraft… but i feel like if i bought it they were probably at least somewhat decent.

    Ahhh Jenna you keep giving me more and more reasons to go out and buy cookbooks! I have hardly any money, but the more fabulous recipes you post the more I can’t think of a better way to spend it!
    Definately making those cookies as soon as I get ED&BV =)
