Beans of a Budget

Hi!

I’m blogging while watching the season finale for The Biggest Loser. The Biggest Loser is really the only show I like to watch but never used to be able to because of my work schedule. One of my good friends actually auditioned for the personal trainer next season so that would be awesome if she got it!

This afternoon I snacked on my new favorite combo: peanut butter mousse!

I used 1/2 cup Fage, 2 tbsp PB2 and topped it with raw cacao nibs and a One Lucky Duck raw chocolate chip cookie! It was a very delicious and filling snackie!

I watched Oprah with my mom and then came back home to start dinner. While I cooked I enjoyed a glass of vino

Got this new book…can’t wait to start it!

For dinner tonight I went back to one of my favorite staples: beans ‘n greens. See the link to my Creative Loafing post tomorrow for the exact recipe. 😉 While cleaning up the kitchen last night I found this old bag of dried beans and that inspired me—

Truth be told, Ryan and I BOTH loooooove lima beans. Especially these giant ones—they are just so much fun (and affordable!)! And this quick weeknight dinner which has them paired with olive oil, garlic and spinach is a winner in this house.

I’ve made this as a side dish before, but honestly I like it by itself….the beans are great protein and when paired with the greens it makes for a very tasty and satisfying dinner!

Tonight I had my portion alongside a BIG baked sweet potato:

And here’s the boy’s dinner…..he got leftover collards and mac & cheese as well!

I was very happy that I at least squeezed a few veggies in him! 😉

Dessert was a little “sundae” of sorts—

I combined 1/3 cup whipped cottage cheese with a scoop of Dark Chocolate Dreams and a little bit of raw macaroon crumble. It was awesome!

    I definitely will be checking for that recipe tomorrow! Mmm that PB2 mousse goodness looks fabulous. And Dark Chocolate Dreams is one of my absolute favorites! I loved having it with oats in the morning. Knowing that I’d had chocolate to start the day made me smile. Enjoy the rest of the night!

    Beans (especially dried) are such a great thing! So cheap, so easy, so filling. Lima beans are actually the one bean (and one of the only foods) I dislike, but maybe I should revisit them. I also agree about dark chocolate dreams – that stuff is INSANELY delicious. I’ve got a nice lunch of zucchini pasta with spinach pesto & a cucumber/tomato salad ready for tomorrow – a few dates with raw AB and/or carrot sticks with cashew cheese for a snack. I love Wednesdays!

    What an awesome dinner. I have had a bag of Lima beans sitting in my cabinets for a while now. I bought them forever ago because I loved them as a kid, but I have no idea what to do with them. I will definitely try out this recipe!

    Dinner looks great and congrats on the new writing gig! I already packed my raw lunch – kale, spinach, mushroom, blackberry salad w/ raw goat cheese, almonds and some balsamic. I am so excited I might have to eat it for breakfast…

    I have to admit, I, too, am envious of your meal plans. Desert and snacks all the time and you maintain a weight that is right for you.
    Ok, I NEED YOUR HELP. I was doing really good for about a year, eating great-seriously, so healthy, mostly plant based, just recently I was put on some medication that has me eating like a whale and I have been so down lately that my motivation has really dropped to do anything like exercise, run ( am an avid runner and hiker) and really need some adivce-suggestions to help me find it again to get back at it-both eating well and exercise. I have gained 18 pounds in the last month or so. I am so down-all my hard work down the drain. Help please. I would love an email from you rather than on my blog.

    I really appreciate how balanced of a diet you have. You are a great example for me; you are obviously in great shape and you don’t restrict yourself from desserts. That makes living healthy so much more realistic for me….being able to eat what you crave just in moderation. Thank you for your inspiration:)

    You should check out the picture I posted on my blog. I just finished my first jar of the dark chocolate peanut butter and I scraped it clean to the extent that it looks like its been through the dish washer! So of course I had to take a picture and post it. Haha!

    Mm I used to just eat the lima beans out of the frozen mixed vegetables my parents would always make with dinner. They’re so good.
    I’m doing a raw breakfast for tomorrow, I’ll probably soak some oats overnight 🙂

    Beans and greens night looks great! I love simple and filling dinners.

    Love Dark Chocolate Dreams…just wish it weren’t so expensive! I’ve never tried it with cottage cheese, but I think it looks pretty delish!

    Beans and greens look great! Unfortunately one of the only food my husband won’t eat is lima beans. But I bet that’d be good with any bean. Cannelini or chickpeas especially.

    that spinach looks an awful lot like kale, haha. beans, greens and a grain is one of my “standard” meals. just pick what i have available from each category and toss in some garlic, onion, maybe a little lemon juice or good cheese and it’s always delicious!

    I am watching TBL right now too:) I am so stumpped on what to make tomorrow, it might just be a salad for the meal, but the snack????MAN I need to get a RAW cookbook!!!!

    I didn’t watch TBL all season, but I DVRd the finale and can’t wait to see all the amazing transformations!

    I’ve got raw pizza cheese and a fresh juice on tap for Raw Wednesday. Can’t wait to see what you have planned!

    His whole plate is veggies, well almost! I need to try that chocolate PB, I just noticed last week that the commissary sells it, and that PB2 as well…I swear if not anything else reading blogs like yours have gotten me addicted to thirty kinds of nut butters! Hubby is going to think I’ve gone crazy when he comes home!

    Dried beans are so fantastic….excellent protein and a good way to avoid the sodium (for those of us with borderline HBP). I’m thinking that I’ve got to try this PB2 also!

    I love lima beans! that looks like such a yummy meal. Beans are just delicious..a very under appreciated food if you ask me 🙂

    and you’re really making me want to get PB2! gah I wish we had some near us. I just can’t justify buying a 4 pack for 16 bucks

    I’m trying to do the raw Wednesday challenge too … But I have a couple questions. Are Quaker oats from the big tub raw? Obviously, I mean before I cook them to make hot oatmeal. I mixed them with a 1/2 c. nonfat plain yogurt, water and berries for breakfast thinking that was a good raw breakfast, but then I realized that I don’t know if the yogurt qualifies as raw either! Just cause I don’t cook it doesn’t mean it’s raw, I guess! But I am trying … hehe. 🙂

    I totally bailed on BL this season but I can’t say I wasn’t tempted to watch the finale! Hmm, I may need to catch a bit online at least to see the transformations – it’s so inspirational, even if you don’t have weight to lose, because you just have to admire the kind of drive it takes to make a change like that.

    You are a girl after my own heart with the cottage cheese dessert – I think I have done that exact combo before! Love that PB.
