Birthday Girl Pancakes

Thanks for all the birthday wishes everyone! I wish I could share some of this cake with you all because I have so much of it left (I think I will bring it to school again tonight for everyone) and it’s just so delicious! πŸ™‚ Plus one for Vegan Cupcakes Take Over The World! It’s sitting out on my counter right now and I keep sneaking licks of frosting…mmmm

This morning I woke up and celebrated my birthday in typical jenna fashion—with pancakes! I made SBITK’s whole wheat pancakes and added a cup of fresh blueberries to the batter. I had three doused in hot maple syrup, along with some strawberries and a cup of English Breakfast tea. Now that’s a birthday breakfast!

After breakfast I did what I love to do in the mornings the most: I took my cup of tea and got back in bed to read for an hour while my food digested. It.felt.so.good.

Rather than going to the gym today, I decided to do my MTV pilates dvd instead. My abs were already still sore from that crazy ab exercise I wrote about a few days ago and now I think they will continue to be sore for quite some time after working them for nearly an hour with this dvd. I’m about to head in the shower and my mom is on her way. We are just going over to my favorite part of Orlando today: Park Avenue in Winter Park.—we are just going to stroll around and eat lunch for a relaxing day. Originally I wanted to take the night off of school but this is the same Chef instructor that I missed four days of his class last month so I think I will go…also we are in the planning stages of our chocolate modeling cake so I need to work on that. Maybe I’ll pick up something fun for dinner though on my way or something…we’ll see!

    Happy Birthday, Jenna! I have a question about Amy’s veggie burgers. I tried to cook one on my stovetop grill last night, but it wasn’t warmed through after the 3-4 minutes the box recommended. Do you defrost it first, or cook it another way? Thanks!

    lauren- (I wrote this on an old post, but in case you didn’t see it…)
    I’m pretty new at the whole blogging thing so i’m not sure how it works if you don’t already have a blog. I do know that through blogger you can create and account with just your email address and a password and that allows you to post without starting a blog of your own. Thats what I always did anyway. Hope that helps

    I have always just popped one into the microwave and zapped it for 1 minute and its always been piping hot. I never have time for the stovetop method, but I wouldn’t think you should need to defrost first…maybe you pan wasn’t hot enough? That’s the only thing I can think of….
