Broccoli and Cheese Quiche

We were doing so good eating vegan yesterday. Yes, you! I’m proud of you. Chia seed eggs and all.

Oops.

Not really! Delicious is more like it. There’s really nothing like applewood smoked bacon, is there? Especially when it’s being used in a simple broccoli and cheese quiche. I’m kinda on a breakfast kick lately, aren’t I? Between quesadillas and yesterday’s cinnamon buns, I’m pretty much running a diner out of my kitchen. And the week is young! Oh friends, is it ever.

Now, I know there’s at least one person out there who is thinking, “isn’t this the same quiche recipe she posted back in 2008, hidden amongst bowls of oatmeal and bad photography?”

You caught me! Note that I’m not providing a link for a reason.

It totally is the same quiche but it’s worthy of praise. Trust me! It’s one of my best friend’s mother’s recipes. It’s rich but worth it. I’ve made it dozens of times over the past few years and have enjoyed it most of all straight out of the fridge as a quick dinner.

I also love this quiche for breakfast and lunch, and often creep to the fridge to pull off pieces of the flaky golden crust for a snack.

I just can’t fathom a world without pie crust, can you?

For this you can either make your own or buy one of those handy dandy packaged crusts from the store. I won’t judge.

Broccoli and Cheese Quiche

makes one quiche

Print this recipe!

Ingredients:

one 9-inch unbaked pie crust

6 oz shredded monterey jack cheese

1 large bunch broccoli, chopped into small florets (about 2 cups)

1 tbsp onion flakes

3 eggs, lightly beaten

1/4 tsp salt

1/4 tsp pepper

1 cup milk

4 slices bacon

Directions:

Preheat oven to 350 degrees.

Fry the bacon over low heat until crispy. Drain on paper towels and then roughly chop. Set aside.

In a large pot of boiling water, cook the broccoli florets for about six minutes, until bright green. Drain and rinse with cold water.

Press your unbaked pie crust into a greased nine inch pie and prick the bottom all over with a fork. Arrange the cheese all over the bottom of the pie crust then top with the broccoli. Sprinkle with onion flakes.

Combine the eggs, milk, salt, pepper and chopped bacon in a small bowl then pour over crust. Bake for 1 hour until center is firm and puffed. Let cool completely before slicing.

Time:

1.5 hours

    Yum!
    I LOVE quiche!! I also figure (and I figure correctly here!) that it is actually healthier than pizza because of all the protein in the eggs (and uh, cheese)… so that it keeps you fuller for longer. Plus, there is broccoli in there!
    I also normally love having breakfast for dinner too, but then yesterday I found myself having chili for breakfast… bascially – who needs labels!

    Broccoli and cheese quiche is still one of my all-time fav dishes. I’ve yet to make one on my own…my mom’s is too good that I can’t help but wait ’til she makes it for me.
    But this recipe is very tempting…I might just have to try it πŸ™‚

    oh my, this is lovely. I adore quiches, and bacon, and eggs, and flaky pie crust and… yeah just about every aspect of this quiche sounds perfect. No shame bringing back an old standby recipe, especially one that looks this delicious.

    There really is nothing like applewood smoked bacon – except applewood smoked bacon combined in a broccoli and cheese quiche.

    Quiche is one of my favorite meals. It’s so filling without being too heavy. I’ve never had one with bacon or ham in it, though – I was raised in a Kosher household. I love cheese quiches.

    I love quiche! I once survived almost a whole month on quiche while working in Arkansas on an elephant sanctuary! It’s so good cold for breakfast, heats up well again for dinner with a salad and just all around yummy!

    Oh me, oh my.

    This reminds me of my Memere. I always thought she made the best–the absolute BEST–quiches. I bragged about them to everyone. “This quiche is good, but not as good as my Memere’s!!”

    And then. I located her secret one day when I went shopping with her. It was in the frozen isle of the grocery store!! Gasp! Life has never been the same since. But maybe I’ll strike up the nerve to try my hand at making my own. And maybe I’ll recover from that first shock and maybe it will taste like Memere’s. πŸ˜‰

    My mother always made quiche, custard and every other egg dish you can imagine because we had a host of eagerly-laying chickens in the back yard. We had to use them up! I wish I still had the same problem… might be time for a fresh-egg-roadtrip πŸ™‚

    I haven’t had a quiche in FOREVER. That makes me remember how amazing they are. I don’t know why but I hated them growing up and as soon as I became an adult I became obsessed.

    Sounds like a pretty easy recipe that I would definitely love to try. A few adjustments could easily turn this into a breakfast quiche as well. So, this is a nice basic recipe to keep handy. Thanks!

    I made it! I added one extra egg, used spinach instead of broccoli (cause that’s what I had) and used white cheddar- fantastic! Hubby and dear daughter-age 6- are wolfing it down right now! So good!

    Made the quiche last night, it was so good! I used organic broccoli and cut up some of the stem in small pieces to make it full of broccoli. It was really hard not to eat the bacon before adding it in but I resisted and it was so worth it! My husband approved, I think this will become a regular thing.
