Well, I enjoyed a wonderful ashtanga yoga class today but then things seemed to get pretty hectic!! First of all, I spur of the moment decided to make a coconut cake to take to my family for tomorrow and then I had to grocery shop and then I had to deal with work stuff….and time just gets away!
I had a feeling my day would be crazy so I packed a sandwich to take with me while I ran errands today. Just a simple tofurkey, honey mustard, spinach on Ezekiel bread as well as a crisp granny smith apple. I did a quick (and short) shop at Whole Foods (its right near yoga…I just couldn’t resist!!) but that was a major mistake because it was SO packed I couldn’t even walk…I guess everyone is trying to get in their last minute Easter shopping. I tried to be as quick as possible so I could get out of there and breath!
I took some photos of my food for you guys..please know its not as “cool” as it used to be because I’m in desperate money saving mode and really only bought a lot of produce. No cool new products this week. I’m also trying to eat everything in my kitchen because as of a week from today I will be out of my apartment for almost 10 days. I would rather not take photos of my fridge though, just because I share it with my roommate and she has more stuff in it than I do! It wouldn’t really be representative of my eating to show yall that. That, and its very messy and filled with half eaten chocolate bars. 😉
Baking the coconut cake seemed to work wonders, as always, with relieving some stress. I used the recipe in Eat, Drink and Be Vegan and also made a fluffy “buttercream” frosting that is out of Vegan Cupcakes Take Over The World (But I found the recipe here). I used some red food coloring to make the frosting pretty and pink and after I frost it I’m going to sprinkle some more coconut on top. Voila! You all will have to wait til dinner though to see a photo of that because I’m still working on it!
Okay, off to clean the house, pack for tomorrow, frost my cake and shower! Phew!!

I think I”m gonna give her coconut frosting a try, it’s sounds different… but how could it be bad with mocadamia nut butter in it? Can’t wait to see how yours turned out. I went to WF this morning as well, luckily right when they opened so it wasn’t quite a zoo yet.
I love your blog!! Thanks for lurking on mine 🙂 I must read more of your older posts…. That’s great that your trying to transition to veganism!! I find it surprisingly easy, even though I do live in a pretty meat-centric part of the country.

I can tell you that this recipe will satisfy all your deep dark frosting cravings. My roommate and I are literally high on sugar right now…I can’t keep my finger out of the bowl!!! ITS SO WONDERFUL!!!

Speaking of Veganomicon – have you seen the recipe for the Samosa Baked Potatoes? Next time you’re craving Indian food, TRY THEM. They are sooooooo goood!!! I was hesitant because they require a few spices I don’t normally have on hand, but I found some relatively cheap small packs of spices at Whole Foods (turmeric and mustard seeds). Give ’em a try!

my grocery shopping is pretty unexciting as well. it’s alot of boring stuff on sale that I make exciting!

how many calories are in the pita bread? It looks kinda small, that’s why I ask. Do you think 2 would be a reasonable serving?

They are larger than they look! Each pita has 160 calories in it and is whole wheat so I would stick with one for a serving size. These aren’t mini pitas—they are the real thing! 🙂
