Hi friends—still raining!

This afternoon I was actually quite productive and got a bunch done on the “top secret project” front. My lips are sealed! ;) Midway through the afternoon though I broke for a snack of an Oikos + MixMyGranola—best combo ever!

I dragged my suitcase to begin to pack for this weekend immediately my little beast hopped in and has been sleeping there with his mouse ever since! Dexter LOVES to sleep on bags, in bags, on clothes, on papers, on pillows, in suitcases…..its funny!

Dinner was obvious—

Leftover split pea soup + baby carrots and raw rosemary quakers!

Ryan’s dinner (he really doesn’t “do” split pea soup. lol)—-

I “beefed up” some Annie’s mac & cheese by adding fresh Parmesan, a sprinkle of mozzarella cheese and fresh ground pepper. Don’t worry, he got his veggies in (and those are nitrate-free hot dogs!)! ;)

After I ate I spent a ton of time doing some “at home alterations” to the dress I plan to wear to the rehearsal dinner. I really don’t want to pay for it to be professionally done and so with a twist of a safety pin I think I got it! I’m still going to need a ton of fashion tape (love this stuff) though but I think its doable.

Dessert was a chocolate sundae!

OMG!!! It was so good! I used some So Delicious Coconut Milk Chocolate Ice Cream and topped it with unsweetened coconut and extra dark chocolate chips. I almost died. These coconut milk ice creams are seriously the BEST ice creams I’ve ever found at the supermarket. I can’t believe they are dairy-free!! This was rich and chocolately but with a fraction of the calories and saturated fat that ice cream has. Plus, it is super satisyfing!

haha, our cats do the same thing! They LOVE bags and boxes. Sometimes I wonder why we even buy toys ;)

One of my kitties is sleeping on a bag that hasn’t made it back up to the attic as I type this! My two cats take turns sleeping on it!

I must try that coconut milk ice cream! Every time I see it on here it looks so good!

I’m craving ice cream now! I’ve tried the coconut milk yogurts, but not the ice cream. Looks yummy :-)

Awww so cute—haha the perfect sized bed for Dexter! Mmmm sundae looks absolutely fabulous, especially with the extra chocolate and coconut (which are actually already incorporated in the ice cream!) :D

That’s cool that you do your own alterations. I try to save a money and darn my own socks when they get holes in them. Every little bit counts, right?

My cat always sleeps in my empty (or not yet emptied) suitcase! My boyfriend and I got in some trouble when we borrowed my mother’s black suitcase and our white cat slept in it for a week. All the vacuuming and tape rollers in the world couldn’t get all the hair out…

Hey Jenna! I remember a while back you were cutting back on dairy, for a few reasons but the one that stuck with me was to see the effects on your skin. I have noticed that you have recently started eating more yogurt again, any reason for this? I’m just curious because I struggle with my skin AND my relationship with cows milk. The nutritional stats are so great, but I hate the risk of hormones and the higher amounts of saturated fats. Just wanted to know where you stand on that now! Thanks girl!

Oh my goodness I have to try this coconut milk ice cream, it looks so good and healthy!
Plus, your breakfast looks yummy … what are those chocolatly looking balls in your granola mix? That stuff is so expensive … how much do you get for one tube?

Ahhh, I wore a floor length but lowcut sundress today and I could have used some of that fashion tape!! Does it work well? I havent been able to find it at any stores but I should look online. Thanks for the tip! :)

I think every cat loves suitcases! Mine love to sit on it even after I’m done packing and it’s sitting upright!

I can’t wait to try some coconut ice cream–probably this weekend. The closest Whole Foods/Trader Joe’s is 1.5 hrs away so I’ll be making a trip hopefully on Saturday.

Someone earlier asked about the catch to coconut ice cream–I’ve read most brands are sweetened with agave syrup. Some people are fine with eating a lot of agave syrup, others aren’t. It’s very high in fructose, but if you aren’t worried about that, then go for it! :)

Unfortunately I have no idea about the UK—I would say Amazon is your best bet. I got mine from Sports Authority but I don’t think yall have those in the UK!

I love love love the coconut milk ice cream. The mint chocolate is out of this world amazing. Really, I cannot keep the stuff in my house because I have absolutely no self control when it is around. I hear it calling to me from the freezer and it would be rude to not answer! : )

I was curious about the So Delicious Coconut Milk Chocolate Ice Cream and looked up the nutritionals online. It has MORE calories and saturated fat than Breyers All Natural Chocolate. Each 1/2 c serving size – So Delicious is 150 calories and Breyers is 140. Saturated fat for So Delicious is 8 while Breyers is 4.5.

Yep but did you know that the saturated fat that comes from coconuts is actually very healthy for your heart? There are two types of saturated fats—those that come from animals (and Breyer’s ice cream) and those that come from heart healthy coconut oil. that dessert looks divine! SO funny your cat. My boyfriend’s sister has a pug that LOVES to sleep on people’s bags, it’s like he never wants you to leave – or wants to come with you! so cute!
