HEY girls and boys! Happy Thursday to you! I am SUPER busy around here….can’t tell you exactly why yet, but its comin’!
This morning I began my day with my new favorite snack-—
an ounce of raw goat cheese on Ezekiel toast. This is SO satisfying and filling. And it makes me think I’m in France again, eating yummy bread and cheese for a snack! I also had one of Abbie’s amazing TJ’s fruit leathers. Love apricot!
Around 8:15, I broke for breakfast….oatmeal with chia today!
Last night I mixed together 1/3 cup oats with 1/2 cup almond milk, a pinch of salt and 1 tbsp Ruth’s Chia Breakfast mix. I let it all soak overnight and this morning before heating, I added more water and half a sliced banana. The chia seeds made the mixture very filling and fluffy….especially when topped with a generous spoonful of raw almond butter! 🙂
This breakfast held me over a looong time. I might even like chia seeds in my oats instead of protein powder now…it was THAT filling!
After work, I raced home to grab a quick bite before biking over to Sarah’s. For some reason, I was having a major hankerin’ for a yogurt bowl….I envisioned it all morning long and could almost TASTE it. That’s how badly I wanted it! Anyways, my wish came true and I gobbled down this lovely mess:
It contained:
- 8 oz nonfat Voskos Greek Yogurt
- serving of cinnamon puffins
- small handful Zoe’s Honey Almond Granola
- a drizzle of raspberry preserves
- and THIS:
HOLY YUM. This almond butter, by Naturally Nutty, was fabulous. There were huge chunks of cherries in it and it was unbelievable.
I biked the 8 miles to and from Sarah’s house and originally had planned on yoga, but I was too busy over here so I just dropped down and did 20 man push-ups instead 🙂
Dinner, of course, was delicious leftovers!
A heaping serving of my chana masala and half of a warm, floppy whole wheat naan. Perfection.

A warm VitaMuffin topped with a scoop of the new love of my life (sorry, Ryan!):
It might have been the best vanilla ice cream I’ve ever had. And I don’t say that lightly, folks. Ice cream is serious business and I am a vanilla lover at heart. This coconut milk ice cream by Turtle Mountain was the creamiest, richest, most decadent vanilla ice cream I’ve ever bought at the store. Of course the Tahitian vanilla bean gelato I had in the streets of Paris and Nice were better but that’s, well, France. Different league. Anyways! This was truly amazing and only had 150 calories per 1/2 cup serving. I literally could NOT put it down and kept going back for another spoonful after I finished my dessert….oops! 😉
I can’t wait to make a SUNDAE with this!

I see you got your coconut milk goodies. Oh my gosh, that ice-cream is seriously the best ever!!! I want to get some more, but it is so freaking expensive. Haha – maybe that’s a good thing. Otherwise, it would be in my freezer at all times.
I love how filling Chia seeds are – they make such a great addition to oats. I love being satiated for hours after my breakfast! Have a good night. 🙂

I can’t remember if I’ve seen a ProBar on your blog, was wondering if you’ve tried them (I haven’t) – was on their site and saw they now have one now called Superfood Slam with the Amazing Grass and hemp as well as lots of other yummy stuff (and no soy protein or soybeans !! I can handle a little soy oil or lecithin) Whole foods and about 70% raw, 100% vegan. High cal (a meal’s worth of calories but not quite enough protein for that, so might split for 2 snacks) and look high in fat but should be the good kinds. The cocoa pistachio also looks yummy, and they say they’re recall safe.

Okay, since I’m an oat girl myself (breakfast 5-7 days a week for YEARS now), I must order chia seeds to add. And since my ability to eat dairy even with help is not good, must try the coconut milk ice cream – a great vanilla is worth a try, though the 100 calorie ones may be safer. What type of oats do you use when you let it sit overnight? I’m starting my last box of McCann’s quick cooking (2 min in micro) and looking at WF bulk oats (5 min in micro supposedly) as they’re much cheaper but not sure if they’ll get too mushy if I let them sit overnight. See you eating raw goat cheese – I didn’t know there was any kind besides the soft yummy spreadable kind – does the raw taste the same? Also, I have to ask what that raspberry preserve we see so often is – I’ve yet to find one that wasn’t overly sweet. Happy almost Friday after one heck of a week here!!!

Bumped the quantity up to man portion (1/2 cup oats, full banana) in general and used Nat Nut Honey Roasted Cinnamon PB… He’s hooked on the chia too. Question about the chia breakfast blend.. My store just sells the chia seeds in the bulk area, which is great… but, what is the Ruth’s Chia breakfast mix?
