Chicken Paprika with Homemade Dumplings

Chicken Paprika! Chicken PapRIKa! CHICKEN PAPRIKA! With homemade dumplings. Can you say comfort food?

When I was growing up, my mom would make this dish all the time. It was a favorite in our house. She always served her chicken paprika over wide, slippery egg noodles to soak up all the creamy delicious sauce. It was one of my most beloved childhood meals.

But then I grew up, moved out and forgot about ol’ chicken paprika. I never see it on any dinner menus and my mom is now 3,000 miles too far to make it for me. Boo.

I had some chicken defrosting in the fridge a few days ago and half a container of sour cream left over from my last chili making adventure, and instantly chicken paprika popped into my head! What a perfect meal to make on a chilly Fall night. Easy, too! You really only need a few ingredients for this one: chicken (duh), paprika (double duh), onion, garlic, sour cream and chicken broth. I’m willing to bet many of us have those ingredients in your kitchen right now.

I like to serve my chicken paprika with dumplings because, well, dumplings make just about anything better. And these dumplings are so quick and easy to make that they probably take the exact amount of time it takes to bring water to a boil and cook egg noodles. No lie. They’re like rustic homemade noodles without a fancy pasta maker.

So good. Sometimes I think I could live off dumplings alone. But then I remember how much I love chocolate….and grapefruits…and bread….and wine.

You get the point.

Chicken Paprika with Homemade Dumplings

serves 4

Print this recipe!

Ingredients:

1.5 lbs boneless skinless chicken breast, cut into bite sized pieces

2 tbsp olive oil

2 garlic cloves, minced

1 yellow onion, diced

32 oz chicken broth

1 tbsp paprika

1 tsp sea salt

1/2 tsp pepper

1/4 tsp cayenne pepper

3/4 cup sour cream

1 tbsp flour

for dumplings:

1 cup flour

1/2 tbsp butter

1/3 cup milk

1/4 tsp salt

1/4 tsp baking powder

Directions:

Heat the olive oil over medium heat. Add the onions and briefly saute until tender. Add the garlic, chicken, paprika, salt and pepper and saute until the chicken has browned (about six to eight minutes). Once the chicken has browned, add one cup of the chicken broth to the pot and increase heat to high. Bring mixture to a simmer and continue cooking for another five minutes or so until the chicken is done. Remove chicken with a slotted spoon and set aside.

Reduce heat to low and add the sour cream and flour to the one cup of simmering broth. Whisk well so there are no clumps and continue whisking and simmering until mixture is very thick. Add chicken back in pot and stir well.

Now, make the dumplings. Pour the remaining broth (3 cups) into another pot and bring to a boil.

In a large bowl, whisk together the flour, baking powder and salt. Cut in the butter with your fingertips, working the mixture together until all butter has been incorporated. Add milk and stir so a dough forms.

Turn dough out onto a floured surface and roll out to 1/8th inch thick. Using a knife or pizza cutter, cut thin strips of dough and then across the strips so you have small dough squares. Drop dough squares into boiling chicken broth and cook for about five minutes, until the dumplings float. Drain (reserve the broth for another use if you like) and drop cooked dumplings into chicken paprika. Stir and serve.

      Hmm….usually subbing greek yogurt would be fine (if it’s just a dollop here or a spoonful there) but since sour cream is the premise of the dish, I would stick with that!

        I love chicken paprika! I have a recipe that I use greek yogurt in but it’s only 1/4 cup and it works fine. 🙂

          I actually made chicken paprika and posted it on my blog yesterday. My family is Hungarian and my mom made it all the time. You can sub in greek yogurt and it is almost identical in flavor. I used a 6 ounce serving of greek yogurt and 2 tbsp of sour cream. Turned out great… just like my mom’s!

        I made this tonight and swapped in nonfat plain greek yogurt for the sour cream. It was so yummy! My “meat and potatoes” fiancee loved it! Very homey and great for a fall/winter night. I have never made it before so I do not know if sour cream would made a noticable difference, but it was delicious with the greek yogurt. Next time I will try out the sour cream.
        (Also I was too lazy to make the dumplings since we just got home from our T-giving travels. The whole wheat spaghetti noodles I used instead worked great. When I have more time I want to try the dumplings though — mmm).

      I made a beef stroganoff Sunday night with 2% Greek yogurt, and it was fabulous! I wouldn’t go nonfat, though, and you should make sure not to add the yogurt while the sauce is still hot – it could curdle.

    Ya know, I’d always heard about chicken paprika but somehow in my mind, it sounded like one of those complicated dishes, and thus I never looked further into it. I can’t believe how easy this actually is. Totally trying this the next time I defrost some chicken!

    I’ve never heard of Chicken Paprika before but all of the ingredients in it sound DELISH – and you’re right, they’re so basic that I have every last one of them in my kitchen! Definitely pinning this one (tonight’s dinner perhaps?!) 🙂

    My grandma (who’s Hungarian) used to make this for my brother and I when we were little. I went to Budapest for the first time a year ago and Chicken Paprikash was one of the best things I ate on my trip all over Europe.

    This is similar to a Hungarian Dish I grew up eating called Chicken Paprikash. It has some peppers and other veggies in there with homemade dumplings called Nookedly. It’s amazing. Love your cute little dumplings!

    I freakin LOVE me some paprika! I love the combo of paprika and sour cream for a topping, so I’m sure making it a sauce for chicken is amazing! Not mention easy dumplings! Your mom knows what she’s doing!

    This looks like Chicken Paprikash, a Hungarian dish I grew up eating! Actually I think paprikash is paprika in Hungarian. Hungarian food is so delish, but it doesn’t get a lot of attention out here on the west coast!

    We had chicken paprika for dinner last night. Our recipe uses onion soup mix and cream, its super delish. This looks good though and the same consistency, dumplings sound awesome in it compared to the orzo we usually use!

    I’m intrigued… I guess you are in the US – here in the UK dumplings are lumpy things made of flour and suet… whilst they were nice I was surprised you are raving about them.. but in that dish what you have cooked looks like what I would call ravioli! A quick look at Wikipedia shows me that dumplings mean different things in many different countries although all have a flour and water base. Interesting!

    I made this for my friends last night. We were heading out to watch our local Christmas tree lighting ceremony and needed something quick to eat first. This was the perfect dish- it came together super quickly and was incredibly comforting and warming for the cold night ahead. I substituted chunks of sweet potato for about 1/2lb of the chicken and it was a wonderful addition. Loooved the dumplings!

    I just made this, with a few alterations. Added 1 grated carrot, subbed the chicken with some pheasant meat I needed to use up, and I cooked it in the slow cooker all day.
    This recipe is absolutely delish! I had the same problem as Andrea with the dumpling batter, which was more gloppy than cute like Jenna’s. But, I thought it was very tasty, sticky dumplings and all!

    Jenna, the dish is fantastic, made it tonight.

    My dumpling dough was actually a tiny bit dry, so I added a TBS of milk and that did it.

    BUT, the dumplings were a *tad* bit tough…did I overwork the dough or boil too long or what? Any ideas?

    Made it, loved it, got the Slovak stamp of approval from Mom.
    A friend just gave me some of her Hungarian paprika peppers she grows, so the next batch will be made with SUPER parprika.

    Everyone: don’t be afraid to make the dumplings; they are super easy. I did have to add a splash more milk but I think that just depends on the flour you have.
    They dumplings looked ready at three minutes, but they really did need to boil the full five minutes. Much longer than five minutes, they start to break apart and be generally disappointing.
