Chickpeas Galore

Hi everyone!

Forgive me for not positing last night…we got home from dinner at around 10:00 and I passed out!

Dinner was AMAZING though….Ryan, Derek, Meghann and I headed over to Ryan and my favorite little hole-in-the-wall Cuban place on the beach. Its an outdoors cafe with 2 for 1 mojitos and live music...paradise!

(it was a vacation day, after all!)

Here I am gnawing on the sugar cane!

The sky was sooo pretty and it was a perfect night.

For dinner, I searched and searched and finally found the ONLY veggie entree in the midst of Cuban pork and seafood (oh, how I wanted seafood though!!!)—chickpeas sauteed in tomato sauce with garlic, onion and Cuban spices

HOLY CHICKPEA BATMAN!!! This portion was enough to serve maybe a family of six!!!!!!! I doused it with super spicy hot sauce though and did the best I could… with my meal, I got to pick two side items so I chose black beans and yuca. My meal also came with delicious sweet plantains…my favorite!

Everybody was laughing at how much food I had!!!

In the end, it didn’t even look like I touched my dinner at all but I swear I ate it! I brought the rest home and will be eating chickpeas for weeks!!!

I ended up eating all the yuca, my plantains plus Ryan’s plantains and didn’t touch the black beans. I was stuffed!

Ryan and I totally hit up the gelato place down the street for dessert! I LOVE GELATO!!! And can you even believe it is 94% fat free and only contains 110-130 calories (so said the sign on the door)?! I had my favorite, pistachio!

And, yes, after all this amazing food the hungry hungry caterpillar was finally STUFFED! And I went home and immediately crashed. 🙂

This morning I woke up at 6:15 and thought up hitting the gym for an early morning strength session, but my body told me to just relax instead. I’m about to make some breakkie and go to church at 8:30 and then I will work out later in the morning.

    I love mojitos so much! Definitely my favorite special cocktail. I’ve never eaten at a Cuban restaurant though? Looks delish.

    jenna– 3 questions!

    1. i love that skirt! can I ask where it’s from?
    2. how often do you do ab workouts?
    3. my husband and i are going to vacation at anna maria island this summer. we want to go to tampa for a day–would you recommend this? if so, what kinds of stuff should we do? are there any particularly fun parts of town. we’re not big into the bar/nightlife scene.

      I got that skirt from Urban Outfitters about four years ago! I love it 🙂 As for ab workouts, I RARELY ever do them…..confession! I do 20 crunches maybe once a week if I remember but I really dislike doing them so I hardly ever stick to it. I should make a commitment to do them more often but its just so boring to me! And as for your Tampa question, coming for the day would be fun! You could always go to Busch Gardens or the Zoo or something….and the Hyde Park area is nice to walk around.

    Good thing its Meatless in March! I think those chickpeas will last you through Meatless in May.

    WOW i love Cuban food! I can’t even imagine how amazing those chickpeas must’ve tasted! And I’m beyond jealous of the yucca and gelato… I might need to hit up some cuban restaurant soon, I’m in withdrawl!

    oh my gosh I love love loooove cuban food!!! i miss it so much since I left Miami!! I’ve never seen that chickpea dish before though but i do looove chickpeas! looks like such a fun time 🙂

    yum on the chickpea dish! I would have gotten the same thing – I LOVE plaintains & black beans & yucca!!!

    my fav is mixing plantains with black beans – delish!!! and rice!! great combo!!
