Ryan and I love Cinco de Mayo!!!! We both could live on burritos and tacos for the rest of our lives, so the holiday just fits. We decided to try the Mexican place a few blocks from my parent’s house that I’ve always been wanting to try, called Chihuahua. π It was SO good and definitely worth the 30 minute wait outside with all the other Cinco de Mayo lovers. I ordered a glass of red wine sangria to drink and Ryan got a Sol (a Mexican beer) while we enjoyed chips and salsa. The chips came in a cute dog bowl! How cute is that?! I glanced at the menu for a second and knew immediately what I wanted. Spinach Enchiladas with mushrooms and garlic. I asked for no cheese and definitely did not miss it at all because the tender enchiladas were perfect as is! They were stuffed to the max with sauteed spinach, mushrooms and garlic and topped with a spicy red enchilada sauce. On the side was a small salad and steamed vegetables. I ate 2 of the enchiladas and wanted to eat the 3rd but I was way too full (but not too full because I just had a cupcake for dessert at home)! I know where I’ll be asked to go next time we go out to dinner though π
This afternoon I didn’t need a snack, as I ate such a late lunch. I did, however, have some carrots, cucumber slices and a small glass of wine while I waited for Ryan to pick me up for dinner.
I don’t know how I feel about the hair. I guess this isn’t the best picture for you all to tell. She basically added more layers and bangs, taking off about a half of an inch. I’ll have to see how it is when I actually style it myself in the morning! But….. I have GREAT news!!!!!!!!! The dean of my program called me today and he told me that I could just make up the days I missed next week so I won’t have to re-do this class. I’ll be back to class on Thursday night, so in total, I will have missed 4 days. Next week will be insane trying to make it all up while working everyday. I’ll probably just be going straight from work to school everyday and packing lunch and dinner so I can get everything done. I guess it is worth it though because now I won’t have to graduate late!
I’m off to bed to read. I’m pooped.

May 6, 2008 at 2:22 amHey, Jenna!
This is my favorite food blog, though I’m not a vegan and have about ten years on your age demographic. Keep up the great work.
Here’s my question:
My dear husband and I vacation each year in Orlando without the kids. This year, we’re going to visit St. Pete Beach for a couple of days. Since both areas are your stomping grounds, any restaurant recommendations (mostly St. Pete Beach as we’ve never been there before)?
Thanks!
Cassie

May 6, 2008 at 3:07 amHey Jenna- I just got caught up on the blog after finals and I’m so sorry to hear about all of the unfortunate things going on. At least you get some down time this week and you can make up the classes at school! I’m keeping your family in my thoughts and prayers.
My question is that I’ve really been wanting to try the bikram yoga…but I’m not that much of a “yoga person”. I’ve done it on exercise TV and I love pilates but I’m a little intimidated! I’ve read all about it on the official website etc and found a studio around my area but I was wondering if you could give me any insiders tips on what to expect. Stuff other than things on the website. I’m scared I’ll be lost and confused during the class and stuff!

May 6, 2008 at 3:15 amthe hair is really cute! π and you’re right – the chip basket actually looks exactly like a dog bowl! i am eyeing your spinach enchiladas with hunger… that’s a great menu option for a mexican restaurant. and steamed veggies on the side! yay.

May 6, 2008 at 3:25 amI have the same haircut too (I think it’s the popular cut right now) and I love it on you – very cute! It took me a while to figure out how to make my bangs look right, but it’s otherwise an easy cut to style! I made homemade guac tonight too – love cindo de mayo!

Great haircut! :0)

May 6, 2008 at 1:24 pmKerry,
I know you were asking Jenna but I live in Orlando so I thought I’d offer up my fave restaurants that are easy to find (my REALLY fave ones are mom and pop joints north and east of Orlando that would be a bit hard to get to if you’re in Orlando proper) …
Sand Lake Road (in this order):
1. Roy’s
2. Seasons 52
3. Chatham’s Place
4. Bonefish
5. Moonfish
6. Amura (sushi)
* I dislike Timpano (worst service possibly ever) and Samba Room (just gross)
Downtown:
1. Citrus
2. HUE
3. Wildside BBQ
4. Dexters
5. Midnight Blue
6. Shari (sushi)
I-drive:
1. Oceanaire
2. Capital Grill
3. Cafe Tu Tu Tango (tapas)
* Steer clear of Opa Taverna (Greek) in my opinon and all the buffets (ick)!
Disney area:
1. California Grill
2. Victoria and Alberts (if you wanna spend several 100s of dollars)
3. Boma
*In my opinion all of Emerils restaurants suck and they are just whoring out his name
Hope this helps a little.
Oh and in St. Pete you MUST go to Ted Peters!
