Cookies for Breakfast!

Gooooood morning and Happy Sunday (and day off for me!).

Last week was killer but THIS week I am counting down every hour because Ryan comes on Friday for the weekend and I am so excited to finally see him!! I have our weekend totally planned out with a late dinner at home with Betty and Ted (gourmet meal prepared!) on Friday night when he gets in, and then on Saturday we are planning on playing golf at the club’s super amazing golf course (I can play for free since I work there!) and then going out for drinks and dinner. I can’t wait!

This morning I decided to try something new and different for breakfast….something I have been reading about for probably the last 6 months but had never tried………a Fitnessista Breakfast Cookie!

Now, I did everything exactly like Gina said to do in her “how-to” post except I used a whole banana instead of a half. The other ingredients were: 1/3 cup oats, 2 tbsp silk, 1/2 scoop chocolate protein, and 1 tbsp almond butter. I mashed it all together late last night, just as her post demonstrated and woke up this morning to a delish treat!

Mine didn’t “harden” really though and I think that’s because I used a whole banana and Gina just uses a half. The edges of the “cookie” did sort of though, and turned wonderfully chewy! I will definitely make this again but I think next time I will use 1/2 cup oats instead of 1/3 cup because I’m still sort of hungry right now…….hopefully the coffee will do the trick and I’ll have a snack before church.

So, thanks Gina, for the new addition to my breakfast treats! I am going to make this again next week (or sooner!). You all should really try one yourself!! :)

On a not-so-good note, I slept pretty badly last night! I couldn’t fall asleep initially and then I couldn’t stay asleep…all because the burn on my hand was THROBBING! On Friday, I burned my hand on the oven door. Ouch. Then yesterday, I smacked the burn back on the oven door in a fit of busyness. Quadruple ouch. The burn opened up and now I have this horrible raw wound! I have to go find some super neosporin today because I’m in a lot of pain!

Plan for the day includes:

  • Church
  • Grocery shop
  • Exercise
  • Bible study

……..And it’s chilly outside!!!!!!!

So sorry about your horrid night’s sleep :-( But HELL YES FOR GINA’S SCRUMPTIOUS BREAKFAST COOKIE!!!! :-)

That breakfast cookie is a great idea!

Do you think it would work with unsweetened cocoa powder instead of the protein mix?

Oh She Glows,

Hmmm…you could try it but I don’t think it would be sweet at all! unsweetened cocoa powder is actually quite bitter. You might need to add a sweetener!

yeahhhhhhh! looks so good!!! i’ve made it with a 1/2 cup before and it’s more filling (and HUGE!).

On this beautiful Sunday morning, I’m feeling the urge to let you and Kath (KERF) know how much you two have inspired and motovated me. You played a huge role in shaking me out of an eating disorder that was getting to be pretty dangerous. By reading how you two integrate fitness and nutrition into your lives without going nuts has been a huge eye opener for me. Oh, and the part that it can be FUN and you can enjoy your life and relationships without being afraid was a huge lesson learned as well. Thank you so much for all you do. I hope you know how special you are and how blessed we are to get to learn from you.

I moved from Tampa to Denver, Colorado about a year ago. I wish I could have met you while I was living there!

My 2 year old son and I had our first “Fage” experience this morning, due to seeing so much here, I just had to try it. YUM! We had banana slices, a tiny bit of honey and almond butter, mmmm!

Yum breakfast cookie! My husband’s grandmother makes a version of cookies like this that she calls “no-bakes”. I never thought about making a healthy version for breakfast!

That’s a pretty awesome idea! I need to try it sometime (probably when its a little warmer….I need my hot bowl of oatmeal in these cold mornings)

Ouch! I hope you feel better!! How do you think the breakfast cookie would be even on a cold day (being cold, and all)? Is it something that might be good heated or do you think it would just turn, well, oatmealy?

I made that cookie last night and ate it this morning. Although it was really tasty it didn’t harden much for me either, and I used only 1/2 a banana like Gina did. Oh well! I thought it tasted a lot like the Swiss Oatmeal you get at Corner Bakery sans the apple pieces.
