Crock Pot Pork and Apples

Well, well, well. Here we are in 2013. I feel like it’s going to be good…really good. I think it’s safe to say that I have a lot going on this year and I’m excited to get going! Adam and I are still in Texas visiting with friends and head back to California tomorrow. We’ve both been gone for three weeks and I can’t wait to get back in the normal groove of things. My body is itching for some yoga {or, let’s be honest— any physical activity at all} and some green juice after all these holiday shenanigans. I’m sure many of you feel the same way!

I like to follow up the holidays with a nice easyyyyyyy dinner in the crock pot.

I made this actually before I left for Christmas, but I’m sure I’ll make something else like it again tomorrow when I get home. After spending so much time in the kitchen and entertaining others {Morgan and I have been cooking up a storm this past week!}, it’s just really nice to have a low stress meal like this that literally takes five minutes of prep time.

The great thing about this dish is that it’s easy, comforting and delicious. I love the flavor combination of the apples, onions, brown sugar and spicy mustard with the pork. It’s a keeper.

The bad thing is that it’s really not photogenic. Please forgive me. I tried everything in my power to make this dish look as delicious as it tastes, but no cigar. I hope you’ll just take my word for it.

Happy New Year, friends!! I can’t wait to share this next year with y’all. You guys really are the best thing.

This sounds amazing and I love that the prep is so quick and easy. As a complete photography amateur, it’s so nice to know that even the pros (you’re a pro in my book!) have a hard time photographing certain dishes. It helps me think that maybe it’s not just my lack of skill sometimes. Hehe. 😉 I wish you and your husband a wonderful last day in TX and safe travels back to CA tomorrow. Happy New Year! 😀

Made this tonight and it was delicious! My family loved it too. It was perfect – I threw everything in the crock pot in less than 15 minutes, left to run errands all afternoon, and had my main dish for supper ready when I got back! The only thing I changed was substituting our home-raised goat steaks in for the pork, which worked marvelously. This one’s in my favorites bookmarks section. Thanks, Jenna!

[…] Crock Pot Pork and Apples: I made this also while over Christmas break and was immensely pleased with it. I had told Mom I would make dinner but was leaving for an afternoon of running errands, so I threw the ingredients in the crock pot in less than 15 minutes, turned it on high, and returned home several hours later with my main dish already cooked and waiting. The apples and onions had softened to sweet perfection and the meat – I used some of our goat steaks – was incredibly tender. And everything had the slightest tang of mustard. Yum! […]

This was a fabulously tasty recipe and so simple to make! I lightly seasoned the chops with salt and pepper on both sides and slit them on the edges before placing them in the crock pot and used honey-mustard because I didn’t have the spicy mustard. My chops were larger and so I had to layer a couple on top. The top ones didn’t get as tender, so I removed everything from the pot and my husband and I ate the ones that turned out perfect. The other chops I placed back in the pot to cook another hour. Next time, I will use a large casserole dish and cover and bake them in a slow oven so all the chops cook evenly. Or I might buy smaller chops for the crock pot!

I made this for dinner yesterday and think it may be the easiest “real” dinner I’ve ever prepared. My boyfriend was thrilled to come home to it after a long day at work. (He works in a busy restaurant so the last thing he wanted to do was make himself a meal at 1am.) I will definitely make this again. I used 3 chops (came to about 1.8 lbs) and they fit nicely on the bottom of my crock pot. Next time, I may throw in more mustard and I also like the idea of adding fresh sage as suggested by Molly @ RDexposed above. Thank you, Jenna!

jenna! I just made this while I was at work today (my 5 hour Sunday shift is finally perfect for something!) I layered my thin cut chops and onion, then some diced potatoes and baby carrots, and topped it off with the apples. I used honey mustard because that’s all I had. When I walked in the door at the 5 hour 50 minute mark, I almost hot the floor. It smelled amazing. And then I tasted it…. I hovered over the crock pot for five minutes before I could put my fork down. I make several of your recipes regularly, and this one just gave them all a run for their money.
