earl gray peach preserves

Woahhhh….I finally feel like I’m resurfacing in the world!

I haven’t had the stomach flu for 10 years and….I won’t get into it. Let’s just say I’m more than a little glad my mom and dad were already scheduled to fly across the country to visit me. Now I’m sitting here sipping a cold ginger ale my feet propped up while my dad hangs all the pictures I’ve been too lazy to hang for the past eight months and I’m as happy as a little clam.

But back to these preserves! They are so, so good.

I actually found this recipe in an older issue of Bon Appetit and knew I had to make them as soon as possible. While I’m sorta clueless on sterilizing my own jars and such, I love the idea of canning and preserving. It’s very Laura Ingalls-eque, don’t you agree?

And the best part about these preserves is the addition of Earl Gray tea, my favorite black tea! It gives the preserves a slight floral taste, furthering the depth of flavor and making them absolutely addicting on anything from bagels to crackers to muffins.

So…while I’m attempting solid food again and soaking up every second with my folks, you should totally make this! It’s a fun way to keep summer going all year long.

Earl Gray Peach Preserves

makes 1 large jar

adapted from Bon Appetit

Print this recipe!

Ingredients:

2 1/2 lbs fresh peaches

1 1/4 cup sugar

juice of 1 lemon

3 earl gray teabags

Directions:

Bring a large pot of water to a boil on the stove. Drop peaches in and cook for 30 seconds. Remove with tongs and place on a paper towel-lined. When cool, peel peaches (peaches should peel very easily at this point) then slice into 1/4th inch slices.

Place peach slices in heavy bottomed pot and cover with sugar and lemon juice. Open up one bag of tea and sprinkle in the leaves. Add the other two tea bags whole. Bring to a simmer and cook for about 40 minutes until very thick.Remove teabags and either can preserves according to proper canning procedures (see here) or just ladle into tupperware and let cool.

Preserves will last in sterilized cans for a year…or in tupperware for about two weeks.

    This looks SOOO yummy! Earl Grey is also my favorite tea, I can’t wait to get some peaches at the market and give this a try. Do you think that you would be able to freezer them, like freezer jam? I make a ton of different freezer preserves.

    Jenna this looks and sounds wonderful!

    I love jams and chutneys and preserves…and wow with peaches AND the tea. Lovely.

    Because I never measure things in “pounds” of produce, would you say that 2.5 lbs is about a half dozen peaches, give or take? More, less? Obviously this isn’t an exact science but any guesstimates?

    I have 4 really ripe peaches on my countertop…that are calling for this recipe 🙂

    haha I love the idea of canning too. Along with making my own butter (I’ve done that!), and washing clothes by hand (done that too!), it brings me back to my roots a little more. Canning has always intimidated me so much though!

    Ehhhh to the stomach flu! I hardly ever get it either (I can count on one hand the number of times I’ve thrown up in my life!) and usually get a respiratory virus instead. So, the last time my mom had the stomach flu, I told her how glad I was I don’t get it. Big surprise when the next day I got it and was sick with it for 5 days (and we had to cancel Thanksgiving!)…

    Early grey is my favorite tea too. Have you ever tried Lady Grey? It’s a little more subtle than Earl himself but still delicious. 😉

    Love Earl Gray. Love peaches. LOVE cream cheese and jam together. Too bad I’m probably never going to make this. As easy as it sounds, I can’t see myself boiling that many peaches and then peeling them. I think you should just send me a jar! 🙂

    First, I hope you are feeling better. I have been hearing many a tale of the stomach flue of late (from Michigan to California)…so it must be circulating across the whole country.

    Second, this looks brilliant. Peaches and Earl Grey. Two of my favorite things. I will have to give it a whirl…hopefully the stone fruit will be more abundant next year than this season.

    Love this idea – looks tasty! My mother has SO many delicious canning recipes. My parents have a huge garden on their Nebraska farm – and I’m trying to learn how to can as well. I am planning on picking raspberry’s at a local farm this weekend. Do you have any good recipes for raspberry jam?

    Oh…. I’ve never made any kind of preserves before. But if I did, that’s pretty much exactly how I’d eat it. Wholewheat bagels smothered in cream cheese and preserves. With a hot tea on the side. 🙂

    I made these last night 🙂 But, shhhhhhhh, don’t tell anyone…I used canned peaches!! Didn’t feel like leaving the house, and those two cans of peaches were dying to be used for something. And guess what? They turned out great! My hubby made 2 pb&j’s with the peach preserves and begged me to make more soon!

    I made this friday morning and it was fabulous. I used some peaches that I got at the farmers market that weren’t too sweet (weird) and this was the perfect use for them! So good and so yummy!

    I made 4 batches of this in October. Wanted to say that this recipe turned out to be so versatile. I made the recipe as written. Then I altered it to make plain peach preserves (omit tea), vanilla peach preserves (omit tea/add vanilla extract), and spiced peach preserves (omit tea/add allspice, cinnamon, and nutmeg).

    I properly canned them (a first time experience!) and as of right now we’re working on the plain version. All that remains is the spiced preserves and I plan to open that jar around New Year’s 🙂 All variations have turned out amazing and it was a very enjoyable first experience with making preserves and canning.
