farro salad with tomatoes and feta

This is a pretty salad recipe full of good-for-you-things like cherry tomatoes, chickpeas, farro, brown sugar and feta cheese.

what?

And if you’re sitting there thinking that ALL of my salad recipes involve cherry tomatoes, guess what?

You’re right! I love these little balls of joy. Especially right now when all the pretty colored heirlooms are out. The orange are my favorite! They taste like candy…sorta.

There’s also a plethora of feta cheese in this salad, which makes it an instant winner, as well as a brown sugar vinaigrette. Yep, that’s right: a brown.sugar.vinaigrette.

Whoever said sugar highs were a bad thing?

You don’t want to miss this so head to PBS Food for the recipe!

I love the pops of colour Jenna! I used to hate tomatos – mainly because I couldn’t do the whole crisp-yet-mushy texture thing, but I do love cherry tomatos now!! There’s one type, I think it’s called Candi-To or something, and they’re super sweet. So good! Heading over to the recipe now!

I love the cherry tomatoes and chickpeas, but I’m not a fan of feta. It’s very weird of me, I know. I’ve never heard of farro and based on your description over at PBS, I sort of want to try it. It sounds interesting!

I totally agree – the feta completely makes this dish. Especially that it got all melty and warm from the farro. Mmmm.

I’m a total grain junkie- can you compare it to any other grain? It is like barley? Or freekeh? Or rice? 🙂
