farro salad with tomatoes and feta

by jenna on September 23, 2011

This is a pretty salad recipe full of good-for-you-things like cherry tomatoes, chickpeas, farro, brown sugar and feta cheese.

And if you’re sitting there thinking that ALL of my salad recipes involve cherry tomatoes, guess what?

You’re right! I love these little balls of joy. Especially right now when all the pretty colored heirlooms are out. The orange are my favorite! They taste like candy…sorta.

There’s also a plethora of feta cheese in this salad, which makes it an instant winner, as well as a brown sugar vinaigrette. Yep, that’s right: a brown.sugar.vinaigrette.

Whoever said sugar highs were a bad thing?

You don’t want to miss this so head to PBS Food for the recipe!

I love the pops of colour Jenna! I used to hate tomatos – mainly because I couldn’t do the whole crisp-yet-mushy texture thing, but I do love cherry tomatos now!! There’s one type, I think it’s called Candi-To or something, and they’re super sweet. So good! Heading over to the recipe now!

So pretty, Jenna! I love those glass bowls, too. They remind me of a few that my grandma had. I wish I had hers (or yours!) 🙂

I love the cherry tomatoes and chickpeas, but I’m not a fan of feta. It’s very weird of me, I know. I’ve never heard of farro and based on your description over at PBS, I sort of want to try it. It sounds interesting!

Hilliary@HappilyEverHealthy September 23, 2011 at 5:50 am

Yum this sounds delicious! Cherry tomatoes are my favorite!

Gina @ Running to the Kitchen September 23, 2011 at 6:14 am

There is nothing wrong with an everlasting combo of cheese and tomato. The perfect pair.

Joelle (On A Pink Typewriter) September 23, 2011 at 3:18 pm

Mmm I love those little cherry tomatoes! So cute.. And I totally said that same nature’s candy thing today about carrots.. but we both know that’s not true at all. 😉

Mellie September 23, 2011 at 4:09 pm

Where do you buy farro? I am having trouble finding it!

Erin @ MyLemonTwist September 24, 2011 at 8:19 pm

heirloom tomatoes are devine-it’s really amazing to see all the different colors and varieties! They are like a healthy sweet skittle treat… that brown sugar vin. sounds soo tasty, can’t wait to add it onto my lunch or dinner option tomorrow!

Cait's Plate September 25, 2011 at 5:11 pm

I totally agree – the feta completely makes this dish. Especially that it got all melty and warm from the farro. Mmmm.

Krista September 26, 2011 at 9:08 am

That looks awesome– I love chickpeas!! I miss having fresh tomatoes. My dad grows them in his garden, but I wasn’t home this summer 🙁

Amanda @ AmandaRunsNY September 26, 2011 at 12:42 pm

I’m getting really sad because the fresh tomatoes aren’t going to be around for much longer! I can eat cherry tomatoes like candy too.

Lauren @ Oatmeal after Spinning September 27, 2011 at 6:39 am

I just bought farro for the first time, and haven’t cooked with it yet! Thanks for posting this recipe!
I’m a total grain junkie- can you compare it to any other grain? It is like barley? Or freekeh? Or rice? 🙂

jenna September 27, 2011 at 6:50 am

wheat berries! very similar texture but no required soaking time 🙂
