Finally Friday!

Happy Friday!!

Today is chocolate-chip cookie day at school!!! Good thing I am going home in the morning and can bring some with me…also the maintenance man at my apartment complex said he would “gladly take some baked goods off my hands”. And, of course, I love cookies too! We are making chocolate chip and fancy butter tea cookies…sounds good. As for right now though, I am eating a big bowl of overnight swiss oatmeal with hopes it will keep me from snacking on dough in class! I am out of bananas (gasp!) so I added a little more cherries to the mix. Today I switched up the recipe a bit and soaked the oats overnight in 1/2 cup of skim milk, 10 grams of walnuts and 1 ounce of dried cherries. Then, I just added my yogurt and a little maple syrup. Really, really good! I am having a cup of Tazo Awake tea to go along with it.

For those interested in calorie counting, I thought it was interesting that all my food yesterday (including the nuts and chocolate trail mix) only added up to be 1786 calories. I do aim for higher than that on a daily basis, but my throat has been sore and I always seem to eat less on days I work because I’m running around so much.

Okay…off to class! Have a wonderful morning!

    Hi Jenna!! You were quite busy while I was traveling – and congrats on the baking decision!! I can see you as a bakery owner one day – with the most amazing homemade breads. Perhaps you and my husband could be partners!? Enjoy your cookie baking!!

    Yum! Chocolate Chip Cookies! My absolute favorite. I went through a “learn to bake” phase when I was about 11. I made chocolate chip cookies just about every other day. I followed the recipe, but at that age it took a lot of trial and error. One day they would be too runny and turn into cruncy pancakes, and other times they would just be hard rocks! Thankfully, I’ve mastered the art of baking, mixing and proportions.

    Sorry, for the digression, your post just jogged my memory!

    I know what you mean about not eating as much when busy, I do the same thing. It’s not very mindful and intuitive, but that’s ok. On that subject, have you read “Intuitive Eating?” I found it to be a great book and plan to reread it as soon as I can (i.e. spring/summer break)
