10 Minute Shrimp and Goat Cheese Quesadillas

you’ll need:

frozen shrimp

frozen bell pepper/onion mix (or a red pepper!)

tortillas

goat cheese

spices that you already have

Peanut Soba Noodle Bowls

you’ll need:

noodles

2 red peppers

tofu

bok choy

soy sauce

spices that you already have

peanut butter that you already have (duh)

In-a-Hurry Shrimp ‘n Grits

you’ll need:

frozen shrimp

a bag of grits

some cheddar cheese

a piece of bacon

garlic

green onions

Babaganoush Soup <—-jenna’s fav

you’ll need:

an eggplant

a red pepper

some garlic

tahini

half an onion

spices you already have

a lemon

Tofu Greek Salad

you’ll need:

tofu

feta cheese

half an onion

a can of artichoke hearts

olives

spices you already have

olive oil you already have

some basil if you got it

    Tonight’s dinner has 2 parts and doesn’t involve a kitchen (ours is under construction right now!): peanut butter and banana toast before wakeboarding, followed by an avocado/almond milk smoothie after. Yum and yum.

    So funny. I was going to make shrimp n’ grits tonight because it’s a go-to quickie for me…but we had cheese grits for breakfast. Instead it’s Angela’s creamy avocado pasta and baked chicken.

    I have so much stuff going on that it’s just a total mish-mosh. Probably some leftover potato salad (I used your recipe sans eggs and I’m in love), a massaged kale salad, and some form of protein thrown in for good measure.

    Oh, quesadillas, how I love thee. I’ve never cooked with frozen shrimp before. How do they compare next to fresh shrimp? Any flavor or texture compromises?

    This recipe is so easy, especially considering that we always have Frozen shrimp in our freezer. Plus, anything that includes goat cheese is guaranteed to taste amazing. Thanks!

    No dinner plans tonight because it’s my baby shower, but last night, I threw together a pasta meal and salad based on Giada DeLaurentiis’ avocado pesto linguine. And I used what I had in my house so I didn’t have to go to the store for more specific ingredients!

    1/2 bag of linguine (to feed husband and me + leftovevers) + 1 avocado/small handful of basil/big handful of spring mix/1 garlic clove/juice of a lemon/EVOO blitzed in the food processor + parmesan cheese mixed together and topped with crunchy salad topping since we didn’t have nuts but still wanted crunch. So delicious! Served with a salad made from the rest of the spring mix, 2 chopped scallions, and a lemon vinaigrette. All of it was prepared in the time it took the pasta water to boil and cook!

    I am having Garlic Scape Soup that I made on the weekend and froze for this busy week. I stole most of the recipe from Super Natural Cooking with a few of my own switch ups to make sure I used up my CSA veggies before they went bad.

    PS – does anyone know of a good substitute/adaptation for peanut butter in the peanut soba noodle bowls? They look super good, but I’ve got allergies. =/

    Browning garlic in a little butter, then stir frying 1/2 lb of the large fresh sea scallops (have an excellent nearby fish market everything is from our local waters) and a large bunch of organic spinach with little sea salt & fresh lemon juice. That’s my quickie dinner as have a book to read.

    Yummmm… LOVE quick weeknight meals! And quesadillas… you can never go wrong with those!

    I made a toasted pita topped with mashed black beans & boursin cheese mix + wilted spinach, diced tomatoes, chives, black olives, diced mango and greek yogurt… yeah, it was pretty darn delicious! And ready in under 10 mins!
