we’re having hamburger stroganoff! A new meal that is hopefully quick and tasty. Those quesadillas are calling to me though…
shrimp and goat cheese quesadillas? my mouth is watering!
I’m making chicken lettuce wraps but all of your dinner ideas look yummy as well.
I’m dying to try the tofu greek salad. I’ve seen a couple other bloggers use your recipe for it and it just looks amazing.
Love posts like this! Makes dinner so much easier for the next several days
Tonight’s dinner has 2 parts and doesn’t involve a kitchen (ours is under construction right now!): peanut butter and banana toast before wakeboarding, followed by an avocado/almond milk smoothie after. Yum and yum.
OMG. Now I know what I’ll be having for dinner every day this week! delicious! Great post!
We made your shrimp n grits the other night (with heaven-sent bacon…took it to a whole other level) and it was amaaaaazinggg!!!
Love the ideas…
Thinkin grilled pizza tonight. If I can handle the heat.
Oh my – can I come!? I’d LOVE to grill a pizza.
And – now I want pizza. Grilled or not…
The noodles bowl stands out to me!
The tofu greek salad looks like the perfect summer dinner dish! Will definitely try it soon!
So funny. I was going to make shrimp n’ grits tonight because it’s a go-to quickie for me…but we had cheese grits for breakfast. Instead it’s Angela’s creamy avocado pasta and baked chicken.
I am starring this for future reference! You consistently have wonderful posts, and I just wanted to tell you that. You rock.
I have so much stuff going on that it’s just a total mish-mosh. Probably some leftover potato salad (I used your recipe sans eggs and I’m in love), a massaged kale salad, and some form of protein thrown in for good measure.
Mmm I’ve been meaning to try your tofu greek salad! Great quick recipe ideas!
Those are great ideas! I think I’m making chicken soft tacos tonight…but we’ll see what happens
thanks for the inspiring recipes!! we’re having the Succotash and Goat Cheese Quiche (epicurious.com), which is easy and delicious.
I’m making massaged kale! I’m excited! Those quesadillas look fantastic, though!
Artichoke stuffed chicken breasts on the BBQ with greek pasta salad! Cant wait to try the quesadillas!!
Oh, quesadillas, how I love thee. I’ve never cooked with frozen shrimp before. How do they compare next to fresh shrimp? Any flavor or texture compromises?
I’d love any of that, but I’ve already got our super easy dinner planned: pancakes, eggs and fruit!
This recipe is so easy, especially considering that we always have Frozen shrimp in our freezer. Plus, anything that includes goat cheese is guaranteed to taste amazing. Thanks!
No dinner plans tonight because it’s my baby shower, but last night, I threw together a pasta meal and salad based on Giada DeLaurentiis’ avocado pesto linguine. And I used what I had in my house so I didn’t have to go to the store for more specific ingredients!
1/2 bag of linguine (to feed husband and me + leftovevers) + 1 avocado/small handful of basil/big handful of spring mix/1 garlic clove/juice of a lemon/EVOO blitzed in the food processor + parmesan cheese mixed together and topped with crunchy salad topping since we didn’t have nuts but still wanted crunch. So delicious! Served with a salad made from the rest of the spring mix, 2 chopped scallions, and a lemon vinaigrette. All of it was prepared in the time it took the pasta water to boil and cook!
LOVE, this post! You should do this more often. Your recipes are always a winner!
I am having Garlic Scape Soup that I made on the weekend and froze for this busy week. I stole most of the recipe from Super Natural Cooking with a few of my own switch ups to make sure I used up my CSA veggies before they went bad.
Maybe something with shrimp… like tacos. We have some tortillas we’ve been meaning to eat.
Thanks, per usual, for saving me from my takeout menu. I’ve made the quesadillas a few times. Thinking tonight’s gonna be a repeat.
PS – does anyone know of a good substitute/adaptation for peanut butter in the peanut soba noodle bowls? They look super good, but I’ve got allergies. =/
Can you do another nut butter? Almond butter? Or a seed butter – Sunflower is good. Maybe tahini…?
Black bean salad, brown rice, and steamed veggies with plenty of salsa to go around
We’re grilling tonight–chicken, corn on the cob, and arugula salad. I love easy dinners!
We are having my husband’s Mamma’s Turkey Meatloaf and okra. Tradition and after seeing your blog I def want more SPICE in my dinner. Maybe tomorrow!
Perfect post as I’m sitting here contemplating dinner. I’ve got everything for those quesadillas, I think I’m making them!
Yum! Tonight, I am having left over Spinach Pizza & tomorrow Tofu Greek Salad is on the meal plan for the week.

We’re going to the baseball game tonight which means hot dogs for dinner! But I love this simple guide – it’ll be a go-to when I need a dinner idea!
Oh, oh, oh! Please do this more often! I’m reading it just in time to pick up these items from the grocery store on the way home, and lord knows I’ve already been thinking about dinner for a few hours now, ha!
We’re having vegan mac and cheese tonight , thanks for ideas for the rest of the week!
Spinach and shrimp!
It will be good!
New reader here, and I just have to tell you that I am LOVING your blog! These recipes look unbearably delicious! It might be that I haven’t eaten lunch yet, but I’m literally about to salivate haha

Kashi frozen Mediterranean pizza… boyfriend is playing basketball with some friends so I didn’t feel like trying too hard. It was way too small tho!
You had me at the Shrimp and Goat Cheese Quesadillas.
That picture makes me want to change our dinner plans.
I have the Greek salad bookmarked, but tonight is all about some buffalo tofu wraps! Mm-mm!
I just decimated a stir fry and have moved onto a yogurty chocolatey dessert concoction but everything you listed sounds marvelous. And bonus points to you for making it sound extra accessible with the ‘(ingredient name) you already have’- love it
Very cute post!!
Our dinner is stuffed peppers:
2 bell peppers
rice that we already have
beans that we already have
spices that we already have
peppers stolen from faith’s garden
corn stolen from jenn’s garden
yogurt that we already have
Talk about a throw-together meal!
I’ll pass on all of those for tonight because I have your leftover black bean burgers waiting to be eaten for dinner!
Which those are absolutely nothing short of amazing!!
these are AMAZING – much better than the “quick dinner” recipes you find in magazines. And I love the format you laid them out in. I would make all of them (well probably not the one with tofu, but I think that’s a sign I need to branch out a little).
Yum. The quesadillas look WONDERFUL.
Yum!! And easy is always the best in my book!
Luved them all
Mmmm that quesadilla looks delish!
i want them all!!! and i just had citrus chicken for dinner. yum!
I made sweet and sour kebabs from the latest issue of Women’s Health.
I think those peanut noodles may be tomorrow night’s dinner though!
Cajun Scallops!
I’m grilling skirt steak and making a chimichurri sauce. I may not be able to spell it, and this will be my first time trying to make it, but it sure does sound good!
Great din-din suggestions and reminders, Jenna.
I love this
“peanut butter that you already have (duh)”
You know it. I am SUCH a collector of PB. Yes, collector. I have about 10 brands and 10 jars open at any given time. That, and TJs Sunflower Seed Butter…and I could go to nut butter heaven
Thanks for sharing these recipes, they look delicious… and healthy!
I have a favourite one that I found on another blog, check this out, it is a tuna lettuce wrap, very tasty and healthy: http://www.amandarussellworkouts.com/node/115
i soaked a small pot of black beans today, then split the pot: 1/2 went towards your cuban black beans and the other 1/2 are tomorrow’s dinner- your black bean burgers!
for dinner tonight… cooking for one per usual, a burger dipped in tahini and some whole milk yogurt, berries, and almond butter. unconventional dinner but delicious.
My dinner was blah compared to these amazing ones! I am choosing one for my din-din tommorow
Those quesadillas look absolutely amazing tonight! Too bad I already made veggie burgers!
I cheated and went out to dinner at a restaurant haha but those peanut soba noodles look pretty good, too.
Browning garlic in a little butter, then stir frying 1/2 lb of the large fresh sea scallops (have an excellent nearby fish market everything is from our local waters) and a large bunch of organic spinach with little sea salt & fresh lemon juice. That’s my quickie dinner as have a book to read.
Made your zucchini pizza and am devouringggg it while I write this! Thanks for the amazing recipe once again. : )
Yummmm… LOVE quick weeknight meals! And quesadillas… you can never go wrong with those!
I made a toasted pita topped with mashed black beans & boursin cheese mix + wilted spinach, diced tomatoes, chives, black olives, diced mango and greek yogurt… yeah, it was pretty darn delicious! And ready in under 10 mins!
Everything looked delicious until I saw the shrimp with grits. Sorry but ewwwww !
Oooh, those look so yummy! And that last dish is making me crave tofu! I had a colourful spinach salad with baked eggs in ramekins. It hit the spot
.
Yum. Oddly enough, quesadilla’s were my supper tonight. Though they hardly compare to your intriguing recipe!
gazpacho!!!!
yum
Totes making those quesadillas tomorrow night with stuff, like you said, I already have in my fridge. Thanks for the inspiration!
Such a great round up! These all look delicious!
