10 Minute Shrimp and Goat Cheese Quesadillas
you’ll need:
frozen shrimp
frozen bell pepper/onion mix (or a red pepper!)
tortillas
goat cheese
spices that you already have
you’ll need:
noodles
2 red peppers
tofu
bok choy
soy sauce
spices that you already have
peanut butter that you already have (duh)
you’ll need:
frozen shrimp
a bag of grits
some cheddar cheese
a piece of bacon
garlic
green onions
Babaganoush Soup <—-jenna’s fav
you’ll need:
an eggplant
a red pepper
some garlic
tahini
half an onion
spices you already have
a lemon
you’ll need:
tofu
feta cheese
half an onion
a can of artichoke hearts
olives
spices you already have
olive oil you already have
some basil if you got it

July 19, 2011 at 1:24 pmNo dinner plans tonight because it’s my baby shower, but last night, I threw together a pasta meal and salad based on Giada DeLaurentiis’ avocado pesto linguine. And I used what I had in my house so I didn’t have to go to the store for more specific ingredients!
1/2 bag of linguine (to feed husband and me + leftovevers) + 1 avocado/small handful of basil/big handful of spring mix/1 garlic clove/juice of a lemon/EVOO blitzed in the food processor + parmesan cheese mixed together and topped with crunchy salad topping since we didn’t have nuts but still wanted crunch. So delicious! Served with a salad made from the rest of the spring mix, 2 chopped scallions, and a lemon vinaigrette. All of it was prepared in the time it took the pasta water to boil and cook!

I made a toasted pita topped with mashed black beans & boursin cheese mix + wilted spinach, diced tomatoes, chives, black olives, diced mango and greek yogurt… yeah, it was pretty darn delicious! And ready in under 10 mins!
