Four Ingredient Tomato Soup

We have all been sick for what feels like months, but really it’s only been a few weeks on and off (thanks, new preschool germs!). Sometimes when you’re home inside all day with a baby and a toddler it just FEELS like months. Someone out there has to know what I mean. Anyway, it was just THAT COLD — you know, the one that literally ever 2-5 year old in America has right now. Stuffy nose, cruddy cough and a head that feels the size of Texas. We normally limit Grayson’s media, but I will tell you right now that I have Daniel Tiger to thank for my survival this past week. Teacher Harriet and Doctor Anna have been our lifelines.

And of course Luke got it, too, since the boys already are rough housing (what?!?!?). I swear. They are just so physical already with each other and there is no “just keep the toddler away from the baby” type thing going on. Hah. I mean, I do what I can but at the same time it is completely impossible for me to keep them apart at times. Grayson loves his little brother way too much. And by love, I mean he loves rolling all over him and Luke loves grabbing fistfuls of his hair (how he obviously shows his affection).

Grayson lost his appetite all week, which is highly unusual for our little dude. He’s such a wonderful eater, and always has been. Its so hard when you just feel so yucky though, but as his mom, I wanted to make sure he was getting in some good nourishment.

After a trip to the pharmacy one morning to better load up on essentials (two more humidifiers purchased – I swear, I have bought at least eight over the past three years…where do they all go?!), I quickly threw together this EASY soup at home. It came together in about four minutes and Grayson ate the entire bowl.

If you love the old school Campbell’s version, give this a try. I promise it won’t take any longer than finding your can opener and that can on the shelf. All you do is whirl together some tomatoes then simmer with cream, salt and raw honey. It’s so simple but so satisfying, and made my mama heart happy to see my boy finally clean his bowl again.

Ingredients
  • 1 14.5 oz can whole peeled tomatoes juice
  • 2 tsp raw honey
  • 1/4 cup cream
  • pinch of sea salt
Instructions
  1. In the blender, process the tomatoes and juice into smooth. Pour into a small saucepan and add remaining ingredients. Bring to gentle simmer then taste and adjust for seasonings. You might need a bit more honey depending on when your tomatoes were canned.

    I’m a stay-at-home-blogger mama as well, and boy can I relate! Oh how those sick weeks seem like they go on for months! You nailed it. Especially during the rainy/cold-no-good-days.

    Yum! This reminds me of when I used to make tomato soup with a jar of tomato sauce and plain yogurt. It was usually very bitter–the honey is smart addition. Simple recipes are the best! Sickness with babies is sort of inevitable. Hope you all get feeling better soon!

    Yummy! I will be adding this to my meal plan for next week as my son also just started school and is sick weekly. But his colds are gone in a few days while I am sick for two weeks at a time (also pregnant) so if just liiiiiingers. Thank you!

    When i was a kid my favorite lunch was tomato soup and grilled cheese sandwich. I haven’t had it in years, I must do this soon.     I have made this several times – yum! Lighter milk other than cream works too. I also made some onion jam, so have added that to the blender instead of honey. This is great because it is tasty and does not make such a big batch. thanks!!
