How was your weekend??
This weekend I ate pizza (twice), went to the farmer’s market, baked a cobbler, swept my floors, cleaned my car, had dinner with great friends, went to church, had lunch with more great friends, ate lots of tacos (cooked lots of tacos!), laughed with my girlfriends and had a handsome fellow make me homemade spaghetti.
I also perfected a smoothie recipe I’ve been wanting to try for awhile!
In general, the idea of mango lassis make me a little queasy. A yogurt drink…? Like GoGurt? I’m sorry, but not so much. However, the idea of a frozen, creamy mango lassi-inspired smoothie sounded perfect! Especially on one of the hottest days of the year!
If you’re wondering, cardamom is what lassifies a mango lassi. Yes, I just made “lassifies” a word. What?
I also put honey in my smoothie! Honey makes everything better.
The end result is a thick, creamy mango smoothie that isn’t overly sweet and has just a touch of spice. The yogurt gives it protein and substance, making it the perfect on-the-go breakie when it’s still too hot for oatmeal. You could also serve it as part of an Indian-inspired meal to really wow your guests! Serve chicken tikka masala, channa masala, warm garlic naan and small cups of this smoothie for dessert!
Oh, and don’t forget to invite me…mmk?
1 cup frozen mango chunks
1 cup plain yogurt (not Greek and not non-fat)
1/2 cup milk
1 T honey
cardamom for sprinkling on top
Place mango, yogurt, milk and honey in the blender and process until smooth. Divide into one large glass or two small glasses and top with cardamom.
