Gearing Up

I’m trying to gear myself up for my second night of class. Tonight I believe all we are doing is decorating the cakes we made last night, so it should be an easier/earlier night. If I could get into bed at midnight, it would be very nice.

Tonight for dinner I made the Blackened Tofu from ED&BV. I used pressed tofu that I had defrosted last night in the fridge and cut into thin slices….it was great! I made mine extra spicy with more cayenne pepper and I really enjoyed it. A very easy way to dress up some plain ol’ tofu. With the tofu I made some red quinoa and roasted brussels sprouts and broccoflower. I actually roasted a little too much though and ended up eating only the brussels sprouts. I LOVE those! I also had a small salad with carrot, romaine and bell pepper and drizzled with the last of my goddess dressing.

I’m bringing another oatmeal cookie 2 oatmeal cookies with me tonight for a snack. Hopefully I won’t be as hungry tonight as I was last night!!

    Have fun decorating your cakes! Definitely hope you get out earlier than last night.

    Baked tofu and steamed brussels sprouts are some of my favorites! Dinner looks great (I’m so curious about this red quinoa – every time you post about it I am reminded that I want to try it!)

    How long do you roast the brussel sprouts? I’ve actually never made them before.

    I swear quinoa is the funniest looking grain! Have fun in your class! I think the two oatmeal cookies is totally necessary ; ).

    i just bookmarked that tofu recipe yesterday. i’m glad found it yummy-it give me more of a reason to make it! yay!
