Give Me Something Cool!

Eh!

This intense heat we are having is totally zapping the life out of me as well as totally killing my drive to be in the kitchen. I feel drained just from walking in from my car—when I got into my car after work my thermometer read 102 degrees! The other day it was 107! It’s even too hot to be by the pool right now. The only acceptable spot is next to an air conditioning vent in my opinion.

So anyways, when its this hot outside I really don’t want to cook and really really don’t want to eat a hot meal! But, a girl needs to eat and all afternoon at work I tried to think of something I could make that would keep me full for about 3 hours and that was cooling. The result? Tuna salad! I combined one 4 oz can tuna with a couple chopped jalapenos, about 4 chopped carrot sticks, 2 chopped celery sticks and about a tablespoon and a half of nayonaisse. I served it on a toasted Ezekiel english muffin that I spread with about 2 tbsp hummus (whatever was left in the container). I also had a yogurt on the side for more of a cool down! This dinner was excellent. Just what I was hoping for.

The only problem was fitting it into my mouth!!!

And then I hit the dark chocolate for my traditional dessert:

And I’m bringing more oatmeal for later because I have found this to be the BEST snack at night! Seriously, it’s so satisfying and it fills me up and keeps me going for hours.

I’m feeling pretty burned out. I like what I do but I’m ready to be done. What is it? Like 7 more weeks of nighttime classes? I’m dragging my feet to the finish line, that’s for sure!

Meh. That’s the kind of night this turned out to be! Sorry for the rant but I’m quite blah right now. My heart just wasn’t in it tonight and you can definitely tell when you see my products:

Cheesecake looks great (made it yesterday) and the fruit tart is okay, but the hot icing job on the napoleon? Not so much. It was becoming quite frustrating and I was so tired that I just didn’t attempt to fix it and came home early. One of those moments where you just need a break.
I burned my arm again 🙁

But I did eat this monster fruit bowl with mango, raspberries, kiwi and mandarin oranges. The tuna expanded in my stomach and I wasn’t hungry really at all so I didn’t eat my oatmeal. I ate all the fruit plus some toasted almonds plus a spoonful of vanilla pastry cream.

    nope, PB can be stored either in a pantry or a refrigerator- either is totally fine, it’s more about preference and spread-factor 🙂

    How do you like thos oatmeals? I was going to buy the Golean crunch ones, but not sure if it gives enough volume to keep me full.

    I had tuna pasta salad earlier this week; it just seems refreshing when it’s this hot outside, I agree!

    I had to dip into the dark chocolate m&m’s at work today; it’s been a stressful week with new computer programs starting up at our office; nothing a little chocolate can’t fix 🙂

    wow 102 degrees?! I think we would all be pretty beat and exhausted from that! Plus a late school night for you! Ugh, I can’t imagine starting school soon! I wish summer weren’t coming to an end so quickly. Anyways, I’m sorry you had a rough night…that burned arm sounds especially painful! That dinner of tuna salad looks like something I would LOVE (thanks for posting your recipe! I’ve never tried jalapenos in mine before)…especially with the greek yogurt on the side!! Get some rest Jenna! You deserve it!! And I still think your baking looks AMAZING…the fruit tart is gorgeous!

    I’ve been keeping it in the pantry for the past five years and never once has it grown rancid. I tried it once in the fridge and it turned into a hard peanut butter turd …hahaha I like it soft and spreadable so I keep it at room temp.

    I like these as snacks. It would take two of these packets to keep me full if I were to just have that for my breakfast, but for a snack it is perfect! I have a hard time believing that people eat just one packet made with water at 7 am and it keeps them full til 12….but that’s just me.

    Jenna, That is a serious burn. Ouch! I have a question about baking pans. Have you ever used those newer silicone pans? Thoughts? Thanks!

    at a quick glance i thought the cereal and dark chocolate were in the fridge too! i used to have a friend who froze her candy (snickers bars, etc.). do you ever freeze or refrigerate your dark chocolate?

    hang in there with class. and i don’t see anything wrong with the icing… looks be-a-utiful to me! 🙂

    Jenna, I know how you feel about getting burnt out on school-I remember feeling that way when I was near the end of my bachelor’s degree. But, it’s great that you are doing something that you love and you are almost done!! You’ll get through it for sure 🙂 I actually had one of those moods/mindsets yesterday too….AND it was over a hundred degrees here too….haha!
