Hand Over Your Desserts!

Hey friends!

Sorry for the delayed post! My Thursdays are crazy-busy with work, lunch, bible study, bike……..the list goes on. But tomorrow is Friday so its all okay 🙂

THANK YOU to those that donated and also those that contributed a dessert recipe!!!

My mouth was seriously watering as I looked over all the recipes I have so far. Everything looks so delicious and I can’t wait to try some of these recipes! I need more though! Please, please, please send over your recipes to HelpJennaRun@gmail.com . It doesn’t have to be fancy and can be a recipe that you make all the time and have changed maybe an ingredient or so to “make it your own”. I can’t wait to see the finished product…I know it will be fabulous!

This morning I started off my day with more hot carbs and nut butter (hehe):

This would be a delicious toasted Rudi’s Honey Sweet Whole Wheat bagel with pumpkin seed buttah and raspberry preserves! YUMO!

I just LOVE this pumpkin seed butter.

You can’t be the stats for anything in the world. One serving of two tbsp is equal to 10.5 GRAMS OF PROTEIN (!), 160 calories and 13 grams of fat. Plus, it is green and tastes totally nutty and delicious! This awesome snack definitely kept my engines going for about five hours til’ it was breakfast time!

This morning I broke out these bad boys

These little “cookies” are 100% raw and are so crisp, delicious and addicting!! I crumbled a few of them over my morning bowl of oat bran, along with almond butter and 1/2 banana for a yummy treat of a breakfast

Delicious and filling…I loved the little crunchy cookie bits in my almond butter! 🙂

We finished everything at superman pace this morning and I got home early, around 11:45. I wasted no time in getting lunch on the table! Here is my Rudi’s 7 grain + flax wrap stuffed with 1/4 cup Cedar’s roasted garlic hummus, 1 orange bell pepper, 2 stalks celery and 1/4th of an avocado

I was so stuffed after this monster of a wrap that I didn’t eat the cheese! I DID manage to fit in two tiny squares of organic dark chocolate though 😉

After I ate I (almost) immediately set off on my bike. I really wanted to get in a decent bike ride before I was due at Sarah’s house for bible study at 1:30. So, I put on the Garmin, helmet and RoadID (obvious essentials) and off I went! And I’ll proudly say it again, I LOVE MY GARMIN! Today I set it on bike setting and I just loved how it tracked my distance and everything..told me when to cycle faster and when to slow down—it was awesome! Between getting to Sarah’s house and later getting home, I cranked out a hot and sweaty almost-10 miles and got my heart rate pretty high up there. I was feelin’ the burn for sure!

Too bad my Target bike is the slow kid in the group even though I pedal with all my heart and soul. Seriously…people lap me on their super cool road bikes like its no one’s business. Good thing Sarah is letting me borrow her road bike for my triathlon this summer (thank you, Sarah!!!!!!!)! Her bike has 21 speeds and mine has 6…….maybe that’s where the problem lies? 😉

During our bible study time, I snacked on this yummy bar:

And then when I finally made it home (after being locked out and waiting for my mom to get home from work), I heated up this delicious dinner:

I realize now looking back that I HAVE been eating a lot of frozen dinners lately, which is rather unlike me because I love, love, love to cook! However, this is a good example of when real life gets in the way! Between my 3 AM wake-up call to working on my feet for 9 hours a day, blogging, reading blogs, emailing, working out, bible study, walking dogs, making breakfasts for upcoming days…………….I just can’t do it all! I know there are many of you that feel the same way, no?!

That’s why in situations like this, Amy’s is a GREAT alternative. Actually I think it is the best alternative! This meal was absolutely delicious and contained 21 grams of protein, 380 calories and 17 grams of fat. I think I am in love with Amy’s tofu because no matter what, it is always chewy and perfect! In this meal, it was seasoned with Mexican spices, sprinkled with cheese and served on a mini corn tortilla. Also included in the meal were creamy black beans and delicious roasted potatoes. I would definitely buy this again! Thanks, Amy! 🙂 And also, don’t forget for those that participated with me in Meatless in March, I will be giving away a huge Amy’s gift box in just a few days!

I served my entree with salsa on the side and hot sauce drizzled all over the place! I also had the sweetest, ripest mango I have EVER had. No seriously! It was soooo mouth watering yummy!

Okay. I have seriously been eating my WEIGHT in nut butter lately! But I just love it so! 🙂 No one else in my family helps me out with eating the almond butter…its just my addiction and I really do eat about a whole jar every week and a half all by myself.

Tonight I scraped down the sides of this near empty jar so I had some topping for my warm VitaBrownie!

I am SO happy tomorrow is Friday! Unfortunately my love is going out of town all weekend with “the boys” so I am flyin’ solo. Tomorrow should be interesting as I actually am going to see a new sports medicine doctor regarding my shin splints! The pain is NOTHING like it was last fall (thank God!) but with Team in Training practice starting in 6 weeks, I just want to be sure I take all the precautions and train the proper way. Part of me thinks I am just plagued with shin splints forever, but I’m still hoping and praying for a miracle. This doctor I am seeing tomorrow sounds really great and has worked with Tampa’s professional sports teams a lot during training. Hopefully he can show me some strengthening exercises and get me on the right foot (no pun intended) to start my half marathon training!

And tomorrow night I am very excited to take a Jenna-night. Every girl needs a night to herself once in awhile right??! I feel like so often we get so busy with everything that we forget to take care of the most important thing…ourselves! So, tomorrow night I am picking up Indian take-out, drinking red wine and passing out watching a movie. Good thing Ryan found me this coupon to my favorite Indian place!

    I had the same exact thing for breakfast! ok well not totally exact same thing. I had almond butter with cherry preserves on a honey-wheat bagel. It was the first time I had it and boy it was GOOD. I’ve seen the combination on your blog and thought to myself i oughtta try it. It kept me going til lunch. I usually get ‘tummy grumbles’ by 10 am, but this time i didnt get hungry til closer to 12 pm 🙂 thanks for giving me great ideas for breakfast! you’re a great role model!

    Enjoy your evening all to yourself tomorrow! We definitely all need those once in awhile. I was to try go raw products so badly! I saw a bar at whole foods a few months ago and promised I’d grab it the next time I was there — I haven’t seen anything since! so sad ;( hopefully they’ll re-stock them soon. Have a great day!

    When you said “pumped out an almost 10 miler” i thought you meant you ran! I was thinking “whoa!! amazing!” and then realized you were on your bike.. in which case, still a wicked work out!!

    I ADORE those Amy’s Mexican meals! I usually pair them with a salad and they are a good sized amount of food. So good.

    I have a true nut butter addiction as well. My husband doesn’t eat any nut butters! So, I keep throwing out jar after jar and think. I’m actually eating all these?!

    don’t forget that the wheels on road bikes are quite a bit bigger than the wheels on your bike, so it’s a lot easier to go faster.

    Have you done a review of those ThinkOrganic bars yet? I keep seeing the raw/vegan ones at WF but haven’t given them a try yet.

    I know what you mean about eating frozen meals. I looove to cook but working full-time, going to school and going to the gym after work means that dinner is sometimes a frozen meal. Like you, I am all about the Amy’s! I had a black eyed pea rice bowl today and it was SO GOOD! It’s amazing to me how fresh everything tastes when it’s frozen. Love them.

    sounds like you had a good day – and I totally understand the frozen dinners. Sometimes you just need quick meals! At least the Amy’s ones are healthy.

    That Pumpkin Seed Butter sounds amazing! I have been looking for some alternative nut butters but it’s not all that easy to find here. I have my peanut butters right now, but I want to try almond butter, sunflower seed butter, soynut butter and other butters. I wish we had Barney Butter or Peanut Butter & Co. here!

    I totally hear you on the frozen meals thing. I find that I have been resorting to a lot of them lately. I just got a promotion at work, which is very exciting but entails slightly longer hours. That, coupled with my training for a marathon and other responsibilities (most importantly, spending time with my friends and boyfriend!), keeps me very busy! I too love the Amy’s line of frozen entrees, because you genuinely know that you’re feeding your body well. I’m also a big fan of the Kashi entrees, and the frozen pizzas…so yummy! As of late, I’ve been eating the Amy’s burritos on a pretty regular basis; I’m still waiting to get sick of them =) Might not happen.

    I’m sure that once you acclimate more to your hectic schedule, you will feel a renewed energy to cook. That being said, I’m still always so impressed by your meals–you do a great job of incorporating all food groups into your days, and seem to add your own touches to prepared or frozen meals. You totally put me to shame! I can’t wait to do some cooking this weekend…

    I can’t wait for the give away!! I have a nut butter obsession too! I consume it multiple times a day! I have a question for you Jenna or anyone that wants to chime in! I have not been eating meat, therefore I feel like I have been lacking in protein (my main sources are eggs, tofu about once a week, cheese, almond butter) but how do you all feel about protein powders? I asked my mom who is a nurse and she said they can make you gain weight. Now I don’t want to gain weight by any means but how do you all feel about protein powder? Thanks!

    I also can go through a whole jar of nut butter in 7-10 days. 14 servings per jar? No way! It’s more like 7….hehe. Good luck with the sports doctor! I recently started seeing a sports chiropractor for Active Release technique and I think it is helping….

    Good call on borrowing a bike. Road bikes are ridiculously expensive and one reason I don’t do triathlons (the other being hatred of swimming).

    There’s no shame in frozen meals when you’re trying to get things done! You are a very busy lady…and I know (for me) if it’s between spending time with friends/family and cooking a meal, I take f/f time in a heartbeat and heat up that frozen meal. 🙂

    I have a Garmin question for you- I REALLY want to get one, and you said it tells you to speed up/slow down when you’re biking? Does it do this when you’re running, too? That is so awesome. Okay, seriously have to get one now!

    I always feel bad putting my frozen meals up onthe blog too! But seriously, you can’t beat Amy’s! I am so w/ you girl-and I mean they are awesome nutrition wise. I figure breakfast is actually more important for me to make, so I don’t feel bad if one meal is frozen. I’ve never tried that one! I’ll look for it today!

    sometimes taking a night for myself is one of the most fun things i can do! mine usually involve sweats, movies, and yummy food! hope yours is just as good 🙂

    I notice a lot of the foods you eat are “raw”. Are you following a raw diet? Could you tell me more about this kind of diet and your thoughts on it?

      That’s funny you would notice that; that’s not something I would even think of when I look at my daily meals which usually include cooked egg whites, cooked oatmeal, wraps, protein bars, protein powder and hot dinners…..I’m definitely NOT following a raw diet but I do think that food is best for us when it is as least processed as possible. I am very interested in raw cooking and baking and the health benefits that follow but going raw is not something that I think would work for me.
