Healthy Lunch

After yoga I stopped at a health food store to pick up a few things and grab lunch. I chose a roasted red pepper hummus wrap with cucumbers, bell peppers, sprouts, lettuce, tomato and onion in it. It didn’t have an overload of hummus on it—probably only about 1/4 cup. I also ate an apple (not pictured) and a small piece of dark chocolate for dessert.

I’m still kind of hungry right now …I don’t think that wrap was very caloric because it was mainly filled up with raw veggies. Oh well. My mom and I are going to see 27 dresses (!!!) at 3:00 and I’m going to bring some fruit and a yogurt with me. I’ve been dying to see this so I’ll let you know how it is!

I’m guessing this lunch (including an apple and chocolate) was about 430 calories.

    Hey Jenna,

    I was going to make the roasted vegetable lentil soup you have listed on your recipes page but had a question about using leeks. Do I chop up the whole thing and use it? Or am I only supposed to use part of the leek? I’ve never cooked with leeks before so I’m a little unsure!

    Hey Jenna! It’s my first time commenting so of course I want to tell you that I really enjoy reading your blog and find it inspiring — I am just starting to cook my own meals in my first apartment and love looking at all the things you make in your classes. I also wanted to say that 27 Dresses is a GREAT movie! I love romantic comedies in general but this one was particularly funny and actually had a lot more depth than some of them do! I HIGHLY recommend it to all your readers! Thanks again for such a great read :o)

    There’s a little hole in the wall greek place near campus where i love to eat. I crave their mediteranean wrap…it looks alot like yours only with some chicken added…got to love that greek food, all of it is wonderful!

    The breakfast place is named “Daily Eats”. Its my favorite!!

    You only use the white bulb of the leek. Chop off the bushy part…you only eat about four inches of it—think of it like a green onion. You don’t eat the dark part..only the light part.

    To all: the movie was GREAT!! My mom and I really enjoyed it! I love Katherine Heigl! she’s so gorgeous too!
