How A Sunday Should Be

Today has basically been my perfect Sunday.

Wake up, eat a great breakie, work out with the boy, go out for brunch with friends and then cook a fantastic dinner at home and watch the Olympics. Can it get any better?! This afternoon I had a late snack around 5:00 (after we ran errands and did stuff around town) of a fage with 1/2 cup Go Lean Crunch (Honey Almond Flax). I was craving frozen yogurt but decided to save money and have this instead. It fulfilled my craving for something cool, creamy with a little crunch. Perfecto!

Ryan and I were lazy for a little while after that and then made a yummy and healthy dinner at home. Ryan had caught this massive grouper a couple months ago and froze it, so tonight he grilled that outside while I made some spinach and sweet potato fries for sides. For the spinach, we just used a 10 oz box of frozen chopped spinach and I heated it up with sea salt, pepper and about a tbsp of light smart balance. For the sweet potato fries, I sliced up a sweet potato (only 1, the fries were just for me!) and tossed it with 2 tsp of evoo and this spicy “Everglades Heat” spice mix I found in the depths of Ryan’s pantry. Baked the fries for 30 minutes at 400 and they turned out perfect—spicy, crispy and pure yum.

We also had a salad with some Kraft Fat Free Italian dressing. I found this in Ryan’s fridge and it’s not my first choice because it has HFCS in it (YUCK!!!) but there was nothing else. It was either a tsp of this or eat my lettuce dry, so I chose the dressing route.

I dipped my sweet potato fries in Texas Pete of course! 🙂

And since I can’t end dinner without something sweet as everyone knows, I made some dessert for myself while Ryan finished his coldstone creation from the other night. I bought these yummy VitaTops (from the VitaMuffin people) the other day at the store to try.

I’ve tried the muffins and love them but can’t find them at my grocery store in Orlando for some reason! These “tops”did not disappoint. It was like eating a small slice of delicious chocolate cake. I topped mine with a spoonful of almond butter 🙂

Just looking at that picture makes me want to go make another one. It was SO good and good for you, too! Can’t beat that for a dessert, right?!

I’m about to take a hot shower, get in my jammies and watch the Olympics to finish up this great weekend. Tomorrow its back at the grind with a new class at school (chocolate & sugar!) and to finish up my last week and a half at works. Times they are a changin’!

    That Vitatop looks yummy! I have seen their brownies, too – want to try those.

    I tried the split pea soup recipe you mentioned last week, and you’re right, it IS totally easy, cheap and delish! YUM!

    Hi I was reading a past comment you made about gaining the freshman 15 in college, and as a soon-to-be college student, I was wondering if you ate the same way as you eat now and excersiced regularly as you do now?

    Hi Jenna — you know, I’ve seen the VitaMuffins at two Publix locations in Lake Mary. If yours doesn’t carry them, I’m sure they would special order them for you!

    Those sweet potato fries look delicious! I’m always looking for good sweet potato recipes (since it is a vegetable that intimidates me), so I can’t wait to give it a whirl.

    Those place mats are adorable!

    I asked this question the other day but don’t think you saw it. The other day, I was about to buy some fage but was wondering whether you can tell a difference b/w the fat free and 2%. You seem to mostly by the fat free.

    Just curious, if French yogurt typically thick and sour like greek yogurt is?

    Also, what was the book for France you took that discussed where to eat etc?

    I love vitatops too. I buy the mix from their website and then make and freeze at home, they are much much cheaper that way.

    I DEF. did NOT eat the same way I eat now when I was in college. Oh my gosh I was quite unhealthy. I ate all my meals in the dining hall and always made healthy choices but the thing that made me gain the weight was DRINKING!!!!!! I joined a sorority and drank heavily quite a few nights of the week. Not wine either. Beer, mixed drinks, shots….sodas. And then I would come home all drunk and eat snack mix. Yup, I’m sure that’s what did it!!!!!!!! I lost the weight because a) after my freshman year I got really really sick and was in the hospital for awhile and b) I got a personal trainer and busted my butt at the gym and found yoga 🙂 No more drinking! I feel I got it all out of my system when I was 18 but wow…that was scary. Drinking = fat tummy. It’s proven. Drinking is the likely cause of the freshman 15 so I would advice to be very careful about that!!

    I think you can taste a difference between the two. The 2% has more of a richer taste and a smoother mouthfeel. I go back and forth between the two but have really stuck with the fat free more because its 40 calories less, tastes *basically* the same and doesn’t have any saturated fat.

    No, yogurt in france is not the same as greek yogurt unless you go to the grocery store and buy fage. It’s like dannon but plain usually and served for dessert.

    The book was called “Patricia Wells Food Lover’s Guide to Paris”. You have to order it special off amazon though because its been discontinued! Good luck!

    I LOVE sweet potato fries. I used to buy the Vita Brownies, but my store doesn’t carry them anymore!
