hummus and avocado toasts with roasted tomatoes

Why hello there, darlings. It’s such an honor to be a guest here today. Thank you Jenna & all of you for having me, this is such a treat!

I’m Lisa, “the Gluten-free Entertainer” and can be found over at the blog, With Style and Grace. I’m all about healthy, delicious gluten-free food that’s easy and attainable. I also help host and hostess incorporate gluten-free & other allergy-free options into their menu. You can’t fill up on carrot sticks, trust me.

With all that said, let’s talk about these party bites.

I like these for many reasons, 1. They’re healthy and after the Holidays, who hasn’t made the resolution to be healthier? 2. Can easily be made gluten-free. 3. No dairy required 4. Vegetarian friendly.

Ps. You don’t need to have a party to enjoy these. You don’t even need to cut circles out of your toasts. Make this into a sandwich and enjoyed as a snack or light lunch and if you’re in a time crunch, you can top with fresh tomatoes instead of roasted.

I chose gluten-free millet bread, but you can use any type of bread you prefer.

I went with a biscuit cutter, but you could use any size or shape cutter you’d like.

Top with hummus. Homemade or store bought.

Layer on the avocado, a little or a lot.  Sprinkle with salt + pepper.

These party bites pair nicely with tomato soup, which you can serve in little glasses to keep with the “bite size” theme.

Hummus and Avocado Toasts with Roasted Tomatoes

Makes 6 – 8 party bites

Print this recipe!

 Ingredients:

6-8 slices of bread [gluten-free, whole wheat, etc.]

1/2 cup hummus [store bought or homemade]

1 avocado – halved, pitted and peeled

4 plum tomatoes, halved lengthwise, cores and seeds removed

2 tablespoons extra virgin olive oil

2 teaspoons balsamic vinegar

salt + pepper to taste

Directions:

Preheat the oven to 450 degrees F.

Arrange the tomatoes on your baking sheet, cut sides up, in a single layer. Drizzle with olive oil and balsamic vinegar. Season with salt and pepper.

Roast for 25-30 minutes, until the tomatoes are beginning to caramelize.

While the tomatoes roast, toast your bread. Using a cookie cutter or circular object, cut out 1-2 circles per toast, depending on how big the piece of bread is.

Spread ½-1 tablespoon of hummus on each circular toast.

In a bowl or plate, mash avocado with a fork, leaving large chunks.

Layer the mashed avocado over hummus, season with salt + pepper, and then top with a roasted [or fresh] tomato.

Serve immediately.

Optional: top with goat cheese or feta or serve on the side.

    I like the hummus, avocado combo (especially with cheese and eggs on toast).

    I buy the Udi’s bread and Food for Life breads for a switch-up now and then (though I’m not gluten free). They are so good, I have to eat 3 slices per meal!

    What a great idea for a party! I’m a big fan of mashed avocado and hummus sandwiches for lunch. I’ll have to try adding a roasted tomato next time. It sounds awesome!

      You could make croutons and add to a salad or toss into a food processor and make bread crumbs.

    That first picture LITERALLY made me swoon. This is such a good idea and definitely a sandwich I want to try. (I also just so happened to recently get a biscuit maker so I can even make the round toasts!). You really can’t beat the hummus/avocado flavor…I may just need to sneak some bacon in there too 🙂

      since you can’t do grain, another option is to take the roasted tomatoes and spread the hummus and avocado into the center – it’s delicious, I already tried it 🙂

    What a lovely appetizer/lunch!! Looks like you used Udi’s GF bread?? I am obsessed with Udi’s bread topped with mashed avocado.. the bread has this buttery taste that pairs so well with avocado. Thanks for the idea! I plan on using it for my next bash! 😀

    Thanks for the inspiration! I toasted a dense multi-grain bread, drizzled it with Olive Oil, little S & P and then spread an avocado on it, little more S & P. It was paradise on a slice of toast! Yum!

    Hummus and avocado is one of my ‘go-to’ ideas for lunch. I’ll have to try it with roasted tomatoes soon.

    Yum- there is a place in Boston that used to make a sandwich similar to this but they stopped making it. Since then I tried to recreate it at home more than once and it is always amazing.

    I made these for lunch today and they were fabulous! Next time I’ll use gluten free bread as in the recipe. It is a bit denser and I like that quality. I didn’t have Roma tomatoes so I used vine ripened and they worked just as well. Thanks for sharing your wonderful recipes. I too found you on Pinterest.

    Incredible! I made these tonight for dinner to go along with a big salad and it was just perfect! I maybe messed up on the tomatoes, so I just ended up using fresh tomatoes sprinkled with balsamic and salt and they still turned out delicious. Thank you!

    This is fantastic! I made some navy bean hummus to go along with this recipe and OMGOODNESS was it good! So simple and yet so delicious! The roasted tomatoes were the icing on the cake. The balsamic added just the right touch of acid to the flavor equation. I made enough of everything to eat more today. I didn’t use an avocado but purchased pre blended avocado in my produce section. My husband said this was a keeper and that it would be great as small appetizers using smaller cookie cutters. I bet you could use melba-like toasts also. The options are endless.     Buy a baguette and ask the grocer/baker to slice it in the store. Brush the circles with garlicky oil and toast them on a cookie sheet for a few minutes. This cuts the prep time in half!
