In The Door, Out The Door

I’m in a huge rush this afternoon to get to school an hour and a half early to start baking for the practical I missed! Hopefully I can get the baking part done tonight and come in early tomorrow and decorate and then I’ll be caught up. Good thing I have great leftovers to fall back on!! I made another quick burrito with the Sweet Potato/Quinoa leftovers from last night. Last night I mixed together the sweet potato, quinoa, onions and peppers so all the flavors would mingle overnight. It worked–I think this meal was even better the second time around! Gotta love great leftovers! I didn’t even attempt to wrap this up though—I just dug in with a fork and ate the tortilla by hand!

I’m bringing a peanut butter Z-bar for a snack later. I bought a box of these last week and really like them. They seem to be the perfect thing for me to snack on at school!

    I’m sorry you missed Mother’s Day with your mom, hope everything is better with your grandmother. We had some of your carrot cake yesterday, really good, soo buttery. Took a big piece over to my mom today and she ate the whole thing, scooping up every last crumb and drop of icing.

    I can’t count the times that I’ve had to eat a wrap with a fork and knife! It seems like not a lot when you put it in, and then poof! You can’tclose it. I guess it’s more fun that way. =)

    I love it when my leftovers are even better the next day. That’s always the mark of an excellent meal, in my opinion.

    Hi Jenna I was wondering what portions of everything you used for your trail mix a while back. I always want to make my own but I am unsure of what portions I should use for a well balanced trail mix. Thanks

    honestly I don’t measure out or portion what I mix in. Its totally just a little bit of this, a little of that. Whatever I’m in the mood for at the time. I’m thinking maybe 10 nuts and a handful of cereal though if you want a quick method for a snack? This mix was more because it was supposed to be a meal, so I probably used maybe 20 nuts and a cup of high fiber cereal, along with dried fruit. That’s why it kept me full for so long!
