So, nothing ever comes easy, does it? My modem at my apartment is apparently broken so I am at school blogging. I have to go to the brighthouse place tomorrow morning before work and swap out the modem for a different one to hopefully fix the problem, because as of right now, I have zero internet at home :(.
Tonight before all the internet drama happened, I made a great dinner. I made Dreena’s Blackened Tofu again (SO good!) with roasted brussels sprouts and whole wheat couscous. I love simple meals like this. They are so satisfying and you can’t beat roasted brussels sprouts!
I’m bringing a nana pb cookie “bite” to have later on because I don’t think I will luck out with a gourmet snack buffet again! I wish!
Sorry this is so short—I have to get in to class. Hopefully these issues will be resolved soon. Frustrating!!

i am clearly not jenna haha but the recipe is from eat drink & be vegan by dreena burton, and it mightttt be on dreena’s blog too? her recipe site is something to the effect of viveleveganrecipes.com. i think there might be a blogspot in there but im not positive. it’s infringement for people to post copyrighted recipes for public use without explicit permission.

Although the popcorn doesn’t have splenda in it by name it does have sucralose, which is another artificial sweetener. I’m torn between the whole thing because I don’t use any artificial sweeteners except for the popcorn…but it’s not as if I eat three bags a day or even one bag everyday so in moderation I think it’s alright. I would never knowingly put artificial sweeteners in my coffee, tea or food just because I know the health risks associated with them and its just not something I want in my body. But if the only kind of A.S (artificial sweeteners) I consume are in this small bag of popcorn, I think it’s okay and I’m not going to worry about it.

Nicole is right, the recipe is from Eat drink and be vegan by Dreena Burton and I sadly cannot disclose the recipe because it is copyrighted…the cookbook is AMAZING though and I have made a ton from it so I would highly suggest checking it out at the store! You won’t be disappointed.
