Keep On Truckin’

It’s just been one of those days! This morning I had some extra time so I stopped at the Barnes and Noble cafe right next to work to get my favorite tea–Vanilla Cormoro—after literally scrounging for pennies in my car because I don’t have any cash. I got a grande and then 3 minutes later proceeded to spill the entire thing EVERYWHERE in my car. My cupholders were under water (or tea should I say!). No fun! Then, when I was heating up my oh-so-good soup for lunch, half of it spilled out when I opened the container. sooo…I’ve been hungry all afternoon. I had to stop at Publix also this morning to pick up some litter for Dexter and when I was there I found Annie’s Cinnamon Bunnies, so instead of puffins for my snack, I had a few handful of these with a banana. They are really tasty—just like teddy grahams!

Well, continuing the theme of “in the door, out the door” this week, tonight proved no different. Luckily, I had frozen a portion of split pea soup a couple weeks ago and set it in the fridge to slowly defrost on Sunday. I love freezing individual portions of things like soup because it is so easy to just plop in the fridge and defrost for one night’s meal. This soup is creamy and very filling because of all the protein in the split peas. I enjoyed it with a salad and an ezekiel english muffin that I toasted up. Now it’s off to school to start decorating my cakes from last night! I’m bringing a lara bar for later and hoping for a relatively early night because I feel worn out and its only Tuesday!! oh no!

    aww Jenna, sorry about all the spills today. I’ve had my fair share of those kinds of incidents too! Your attitude is awesome as usual. Sometimes we’ve just gotta laugh at ourselves!

    You poor thing! I’m so sorry.

    You must try the chocolate bunnies, they’re so yummy! And they definitely satisfy that craving for teddy grahams. (Minus all the crap.)

    hey jenna (and all)! i have a quick question about storing things: for your sliced sandwich bread, do you keep it in the refrigerator or will the rudi’s brand stay fresh on the counter for a while? and with tofurkey slices, how do you store those? in a plastic bag in the fridge? that’s what i do, i was just wondering if there’s a better way to keep it fresh longer. since i live alone, i can’t eat this stuff fast enough till it goes bad! thank ya!
