Now, for a news update:

I got an interview for my externship!!!!!!!!!!!!!

…………..for being a cake decorator at the brand new Publix Greenwise market opening up in Tampa later this fall! The store is totally, 100% organic and boasts a complete scratch bakery (meaning they bake everything in house…breads, cakes, sweets…nothing in frozen ever). My interview is July 13th and they called me last night at school to let me know! I’m so excited/nervous! My future apartment is only half a mile away from the store so I wouldn’t even have to drive to work…it would work out perfectly. Now I just have to get the job 🙂

Now, on to my food!

I didn’t go to the gym this morning because a certain black furry monster woke me up at 6:30 by shoving his mouse in my face. I decided I would rather take it easy this morning and lounge in bed a little longer then usual. As a result, I decided to make oatmeal because I wasn’t dripping with sweat like I usually am while I make breakfast in the morning. I made my oats with soymilk, a sliced banana, some blackberries and a spoonful of peanut butter. They were good but for some reason I just think I’m a little burned out still on oats. They might have to hibernate until fall.

For my lunch, I made a salmon salad using a can of skinless, boneless salmon with about a tablespoon of my nayonaisse (soy mayo), some curry powder and a few sliced kalamata olives (my fav!). I stuffed it into two whole wheat pita halves with some spinach leaves. Salmon salad always really fills me up for some reason! I also packed some berries ‘n cherries and cinnamon harvest cereal to snack on later.

One week until the brand new amazingly huge Whole Foods opens a couple miles from my apartment. My gift card from my birthday is burning a hole in my pocket…….. I WILL be there opening morning. Anyone care to join me? 😉

    Those animals are adorable!!! That’s so great about hearing from publix greenwise. When you say your “future apartment” are you talking about Ryan’s apartment…teehee just curious!

    I didn’t know they were opening a Publix like that! I’ll DEFINATELY have to go, especially if you are a star chef there 🙂 Great luck!

    Yay on the interview!!! My brother’s girlfriend is going to be the assistant common area manager there, she’s been training at the stores in Boca and West Palm! Super exciting, I can’t wait until it opens 🙂

    The Whole Foods in my hometown is opening a week from today too! I will be joining you in spirit on opening day. I have a gift certificate burning a hole in my packet as well and am so excited to spend the thing. Congrats on the externships interview. I hope you get the job and it sounds like the perfect situation.

    That externship sounds like it would be perfect for you– I’m sure the person interviewing you will see that! I wanted to thank you for inspiring me to try the cinnamon harvest cereal. It’s so good (and cheap if I buy in bulk)…oh, and filling! Definitely more fitting for summer than hot oatmeal.

    Hope in Maine here. I found your blog through Chandra’s and I love it. Congrats on the interview and also on moving in with Ryan. how exciting. Here in Maine I have an awsome food coop and lots of wonderful farm stands, but no big organic healthy grocery stores like that, and since I am vegan and gluten free – i sure would love one;) Enjoy. My dad lives in Tampa, so perhaps I will get to check it out sometime when I visit.
