Lunch

Long Day

Wow, I really don’t know how some people can wake up so early every single morning! This morning I woke up at 5:40 and by noon I felt like the day should have been over. And I consider myself a morning person!! I guess having a cold doesn’t help. Anyways, the MRI went fine…it took forever—about two hours of NO moving a muscle! I will get the results next Thursday when I go to the doctor again.

I grabbed some snackies from home this morning to take with me on my travels but only ended up eating the zbar.

It was just meh. I’ve decided I really don’t care for the chocolate flavors of zbars very much. I much rather prefer the yummy blueberry flavor!!

I stopped at the library and at this organic tea cafe downtown. I got “rain forest mint”. It was very good and fresh. I love mint teas when I’m under the weather because they help defog my head.

And then when I got home I made an early lunch of a hummus & tofu wrap with an apple, sugar snap peas and cherry tomatoes. I’m loving this Sabra Roasted Garlic hummus!!! It was delightful. I used 1/4 cup of it on my wrap along with some leftover baked tofu from the other day. Very tasty 🙂

After I ate I laid down for about an hour and I plan to just veg out for the rest of the day. It feels so nice to relax!

Wow. That wrap looks incredible! I’m finally going to have to try the baked tofu because it just looks so good like that– and like a very convenient lunch.

That’s funny. You, Caitlin, and I all had wraps for lunches today. I think we’re all in the smae groove preparing ourselves for dinner tonight. 🙂

Did you find the Spooky Smors Clif bar at Whole foods? I can’t find one at publix and I really want to try it.

TWO HOURS for an MRI?? Why did it take so long? The one of my knee too only thirty minutes. It was open, however, and I don’t know if that makes a difference.

Two hours of not moving? I’d go nuts.

Mint flavoured teas are pretty high up there on my favourite tea types list. Mint is just so nice and comforting.

Hey Jenna, I asked you this question yesterday but I guess maybe you missed it. I made the baked tofu the other day and it didn’t turn out chrunchy at all, however, I only used about half a tbsp of sesame oil (on half the package of tofu, after pressing) and I used white vinegar instead of rice vinegas (All I had), do you this I need more oil to get it to turn out crunchy or did I maybe use too much vinegar or the wrong type? Thanks so much, hope you feel better!

Hope your MRI went well–I had to get a number of them a couple years ago, and waiting for hours to get them done is the most annoying part! Regarding the waking up early, you just get used to it. I wake up at 4:45 everyday because I’m crazy like that (I like to run before work, and have a long-ish commute), and now I’ve adapted to it completely. Just takes time! (Though I don’t totally advise anyone doing it unless they *have* to)…

    Nicole,

I found the spooky s’mores zbar at Whole Foods….but trust me IT TASTED EXACTLY LIKE CHOCOLATE BROWNIE. No difference whatsoever in my book. I think it might BE chocolate brownie in a cooler package. Hmmm…

    angelcubbie,

Hmmmm……..let’s see….I use 2 tsp sesame oil for half the package of tofu but I think the real thing is your oven temperature and the thickness of your tofu slices. I set mine at 400 and slice half the package of tofu into four thin pieces. Bake for 30 minutes and flip at 15. All oven’s are different so might need to tune yours up or down a little bit. It should get golden brown!

Plus , how do you feel about v8 juices? Ive been drinking the low sodium v8 to get some vitamins in..do you think that counts just as well as veggies?

    Hi Jenna,

I had an MRI yesterday. Hated it, hated it, hated it. I had to get an I.V. for contrast so the results are easier to read. Bleh. I hate needles just as much as I hate being cramped in a tiny space for several hours.

Anyway, I’m sure that the MRI will clear things up for you, but I have a suggestion concerning some relief for your shins. I have a few good stretches and a neat little ice trick that have always been nice when my shins were feeling strained. You’ll need a partner for the stretches (in comes Ryan). Sit on the floor with your legs straight out in front of you. Have Ryan apply pressure to the tops of your feet while you resist him. Then flex your feet and have him do the same to the bottoms of your feet. I usually hold each stretch for 30 seconds each. Repeat a couple of times.

As for the ice, get yourself some paper cups, fill them to the top with water, and them plop them in the freezer. Once they are solid take them out and rub them on your shins. As the ice melts, tear away the sides of the paper cup!

I hope the suggestions help! Again, I really enjoy reading your blog. You really have a great perspective when it comes to exercise and nutrition!

Sorry about my comment re being sick on your earlier post. For some reason I thought it was a few times in the past couple of moments. (Maybe I read too many blogs and they blend together!) Glad to know that you are healthy though! And once you get the MRI results and the leg sorted for running you will really be 100%.

Hope everything is fine with your MRI and at the very least they can give you some insight as to what’s been going on with your shins. Your lunch looks so good!!!

Eesh, no power for 5 days…thanks Ike! I can’t WAIT to eat real food again…going to scrounge around for a grocery store tomorrow so I can have something other than Kashi bars and crackers. Not that there’s anything wrong with that, but after 5 days of it, I’m ready for something fresh. 🙂

I’m going to put hummus on my ever-growing list…
