Mexican Made Healthy

Hey friends!

Oh my gosh, I feel SO SO SO much better than I did yesterday. All day long yesterday I had zero energy and felt almost sick I was so lethargic. Today, on the other hand, I have oodles of energy and feel at the top of my game. I’m giving credit to my super Green Monster this morning, obviously!

I was actually just answering a question about this in the comments to a reader who asked me how long a GM keeps me full. The answer is about 3-4 hours. Really. Smoothies never used to keep me full but I think my body has gotten used to them and now if I have anything heavier (like oat bran yesterday), I just feel so bloated, heavy and tired all day long. I’m not saying a big bowl of carbs in the morning is bad—oatmeal is great for you—but I just feel so incredibly energized and full of life when I drink a green smoothie instead. The boyfriend agrees!

So this morning I was pretty productive and wrote another article for True/Slant on how to keep your take-out meals healthy! Check it out here! I also shipped off the Super Charge Me cookies to Amy and brought over some for my parents as well. I may or may not have nibbled on half a cookie (from my parent’s batch, not Amy’s lol) while I ran around. 😉

For lunch, I met Ryan at our favorite casual spot–Burrito Boarder! I LOVE this place because they are so laid back and friendly. Plus, going there makes me think of my brother with all the surfboards hanging on the wall; he would have loved it! Anyways, they are very eco-friendly and healthy and I love being able to customize my lunch. Today I got a baja grilled fish burrito bowl….extra spicy!

In my bowl I had:

  • grilled mahi mahi
  • lettuce
  • extra helping of black beans
  • jalapenos
  • cilantro
  • onions
  • corn
  • salsa
  • guacamole
  • mexican cheese sprinkled lightly on top

SO GOOD. I saved a ton of fat & calories by opting not to get a tortilla or white rice. But you already knew to do that if you read my article. 😉 Of course I doused it with extra hot sauce and shared Ryan’s chips as well! These chips are hot and worth every single calorie. There are some things a girl just should never say no to.

Off to work on Blog Summit stuff then hit the gym for a treadmill run! See you tonight!

    Lunch looks FAB! I had a similar issue with hunger yesterday. I have been having fruit smoothies for breakfast & add in pasturized egg whites for extra protein. They keep me satisfied well until lunch time but yesterday’s bowl of oats didnt. I was starving just a couple hours later!

    Your recipe was posted on The Mushroom Channel today:) It looks delicious! I never thought about doing mushrooms in tacos, but what a great idea! I’m definitely going to try it soon!

    I totally know what you mean about a big bowl of oats in the morning it just weighs me down and makes me feel too full and headachy. A nice light cool smoothie is much better!!

    For you green monster lovers out there. Do you freeze your bananas without the peel on so you can drop it right into the blender? I dried to defrost a banana with a peel on yesterday in the microwave and it just turned to mush!

    I love reading your true/slant articles. I have been writing for years and would love to do something similar. Do they request articles from you or do you post at will?
    Honestly I am fascinated by what you do in regards to this blog, your other nutrition articles and your certification. I have recently became a stay at home mom and this is exactly what I need to do for me!

    I feel the same way about green monsters! I’ve had one for breakfast every day since Saturday, and feel so energized! I’ve cleaned up alot of my eating too, doing my own “clean life challenge” so I think that contributes to it as well, but man! GM are so freaking good! Just like you I don’t feel bloated (all day) as if I’d had a big carb-y breakfast. I’m satisfied, but not full. I use Jay Robb egg white protien powder in them, and when I add protien powder + peanut butter I stay full for 4-5 hours. Unbelieveable, but true. I rave about them to everyone and wish I jumped the bandwagon sooner!

    I know what you mean about the oatmeal loading you down. I don’t know why it never seems to do that in the winter, but in the summer I’m always looking for something a little lighter and colder that will still hold me over! GM give me just that! Still, I like having a little dry cereal or a few whole grain crackers on the side just to get a few solids in me.

    I liked your article! Maybe your next one could include some examples? I find myself pressed for time a lot and I HATE having to do take-out or fast food, and I never know what to order. I can follow the guidelines you gave but I’m dying to know what YOU eat when forced to go to a drive-through…and it’s even harder when you don’t live in a big city with all kinds of “healthier” options. I live in the land of cheeseburgers and fries–most people don’t know what hummus is! I would LOVE some tips from you about what items, specifically, to order….

    I love burrito bowls! Whenever I go to Chipotle, I get the burrito bowl (no rice or sour cream) or the burrito salad. All the goodness of mexican food but for much less calories!

    I agree with green smoothies–mine aren’t as pumped up as yours, but I do have a green monster food baby in my belly for at least 3 hours!

    I have been following your blog for about a week now and love it! I have two questions about green monsters. I want to make one so bad don’t have a Vitamix blender and can’t eat bananas. Is it possible to make one in a regular blender and what fruit would you recommend? I’m worried the spinach will get caught in the blades-lol. Thanks 🙂

      No worries!! Ryan uses a regular old blender (a black and decker crush master to be exact…find it at Target!). As for the bananas, my best vote would be to try frozen mango chunks! I think that would be really, really good!

    That salad sounds so good! I think I’ll make something similar for dinner 🙂 I just have green juice for breakfast and find I feel better too. It took me a while to get there, but I don’t even think to have oats/cereals now.
