Happy Monday!
The Easter Bunny decided to come a little late to my house!!! When I woke up this morning and headed down to my car to work, I noticed an “easter-ly looking package” on the windshield. Inside, it was filled with chocolate eggs, a chocolate bunny and a little cupcake!
I had my suspicions but played it cool all morning until I took my break and called Ryan. He answered the phone asking innocently how my night was but he couldn’t keep it to himself any longer and finally admitted to being the mysterious midnight bunny! I know, I know…I’m a lucky girl! 🙂
Before work I decided to take the plunge and make drink some Green Vibrance mixed in water…hey, my dad does this every morning and if he can do it, so can I…right?! Wrong. It tasted AWFUL and I literally gagged. I drank most of it but…lesson learned—this stuff is POTENT and is best mixed into a smoothie. However, I did have superhuman energy all morning without a drop of caffeine, so I am thinking it must be the greens!

I also grabbed a mango and two of Abbie’s raw donut holes for the road—
Work was crazy busy and I finally broke for breakfast around 8:30—
Combo today included:
- 3/4 cup oats with 1/2 cup almond milk + 1/2 cup water
- 1/2 banana
- 1 scoop Naturally More
SUPER filling
I had to eat on the run on the way to my physical therapist appointment. I brought boar’s head turkey + 2 tbsp of Sabra’s greek hummus on Ezekiel bread—-
And a deliciously sweet orange—
The appointment went really well…got some new orthotics for my Pearl Izumis and the therapist was super knowledgeable. She wrote down a plan for me with exercises and stretches and told me to be SURE to ice 3X a day!!
After my appointment I snacked on this yummy bar….
And went home to tackle Level 2 of The Shred! Woohee this really gets my heart rate goin’! No yoga or anything today…spent some time after shredding to work on my shins on the foam roller and then came downstairs to ice.
As for dinner….I really felt like eating trashy tonight. As in, a salad was NOT an option. Just one of those nights I guess! I felt like carbs so carbs it was.
Lovin’ that mac & cheese (recipe from Cooking Light)
I dove into leftovers of my mom’s homemade mac & cheese, MORE cabbage and, randomly, a morningstar soysage. I don’t know where the soysage came from but I was seriously craving it. It actually went quite well with the mac & cheese! This meal satisfied my “trashy” tooth while actually being homemade and healthy. Thanks, mom! 🙂

SO EXCITED. I ordered this protein powder based on stellar reviews from VeggieGirl and Heather. I searched and searched and couldn’t find it anywhere in the store, so I finally broke down and ordered it from Amazon since I was out of my old stuff anyway. This protein powder is 100% raw vegan and is made from sprouted brown rice. I hear through the grapevine that it is the BEST tasting rice protein on the market so I will be sure to do a full review tomorrow when I try it out! Just look at these amazing stats:
I’m thinking both a smoothie and protein oats will be in my future in the morning.
As for the granola……all I can say is YAY!
I got the pleasure of mixing my own to review on the blog and I had so much fun with it! The website offers tons of different options for nuts, seeds and fruit and I finally decided upon the lowfat granola base, goji berries, hemp seeds, chia seeds, amaranth seeds and banana chips. I will be trying this tomorrow as well and putting up a full review!
Dessert tonight was simple & delish—
A little sweet plate with some amazingly fresh and sweet watermelon and a sliver of my raw coconut lemon bars (LOVE these). If that doesn’t scream summer, I don’t know what does!
And that’s it for today, folks! Tomorrow after work I am going to go on a run then will have a bit more time to catch up on emails and questions since today my afternoon was filled with errands and appointments. I DID manage to send out the Super-Charge Me cookies to Courtney and Lindsay though today!! You girls should be receiving them in a few days…I can’t wait to know what you think!! 🙂

Question: Do you think having the greens powder each day of the week before the half marathon (April 26th) would be a good idea? I’m thinking it could provide great race day energy. Has your dad ever done that?

I really want to make those donut holes, just afraid of the carb count! I did make the super charge me cookies after all your postings on them. My husbands’ sub has 2 new guys arriving tonight and they (the sub) are out to sea so the wives are meeting them at the airport. I baked a batch for each guy to go in their welcome bag…and stole one for myself. I used craisins and white chips and OMG SOOO GOOD!

I’m subbing greek yogurt for the sour cream (I think they taste a lot alike and its what I have at home-it works on baked potatoes at least.), do you think that will work out okay?
