My Anniversary!

Hi guys!

Today is a VERY special day because as of today, I have been blogging for one year!!!!

Here’s a link to my very first post . First of all, I can’t believe that a year ago I ran 6 miles! Go me! But if you read further you will see that even then I complained of shin splints. I think I’m plagued. πŸ™ Anyways, I just wanted to thank you all for reading this day after day even when I feel like my life has been sort of boring at points! It’s definitely been a journey….I mean, when I started blogging I was still in the culinary program and hadn’t yet made the switch to the baking and pastry program! I remember thinking school would last FOREVER and now I can’t even believe that next Friday is my official last day of culinary school and I start my actual job next month. Time flies!

So, on to my eats! This morning I had some pumpkin-banana overnight oats

I used 1/2 cup oats soaked in 1/2 cup water and mixed in 1/3 cup pumpkin, 1/2 mashed banana, 1/2 cup Oikos and 1 tbsp almond butter. On top I sprinkled pom seeds and drizzled on some agave.

It held me over very well until 10 am, when I ate the Think Organic bar I had packed

I have never had this flavor before and liked it but prefer the chocolate coconut or apricot cashew more. This wasn’t as sweet. Still good though—and filling for only 150 calories!

Lunch was pasta leftovers from last night. Seriously yall, you MUST make the sauce (recipe in my previous post). It was awesome and got so much better overnight. I know it calls for a whole cup of oil and tahini but it makes enough to feed a small country so you could easily scale the recipe down to suit your family’s needs. So deliciously spicy!

I rarely eat something like pasta for lunch but when I do it really holds me over. I got home around 3 and had a light (er) snack of a blueberry chobani with pom seeds and some grapes.

So, I was planning on going to spin tonight, but being on my feet all day for my first day back at work was a little hard since I still unfortunately don’t feel like myself. My cold has moved into my chest and I’m still a little drained. No doubt I’m sure I could handle spin class but I would rather do something I can take at my own pace….so I’m just going to go to the gym and do cardio on my own. I am reading THE BEST BOOK EVER and am bringing it with me to make the time go by faster. This is actually my second time reading it; it’s THAT good. You must find it! πŸ™‚

I didn’t take any pictures today at work because all I did was make 800 rolls.Β  Yep, 800 of them. It took pretty much the entire day. We were having a big function that needed a ton of bread apparently! I actually did make challah and bagels as well but you all have seen a million pictures of those.Β  Hopefully there will be something new and exciting for you guys tomorrow!

    Congrats!!! on the 1 year. I’m almost at my 4 month ann, and I’ll be taking new picts to track my progress. It’s exciting to think where I’ll be in a year =)

    Overnight oats might work well with my schedule. I made a simple Stir Fry last night and even put a pict on my post today. I’ll definitely have to try that sauce.

    Have you ever tried to scale down the oil and/or tahini in that recipe? I make a similar dish with a recipe from Ina Garten that uses PB and oil. I reduced the oil by half but left the PB as is, and it’s still plenty tasty and dressing like. I know you only need a bit, but it may be worth trying sometime.

    Hmm I think they are pretty much self-diagnosed for the most part. Although you can go see a doctor like I did and have him do a bone scan. That would tell you for sure.

    Overnight oats are cold. You don’t cook them—you just soak the oats in the water overnight then mix in everything and dig in!

    I might actually make the sauce. I bought tahini for hummus and it was expensive, so I need to find some other uses for it as well.
