No More Peas, Please!

Ahhh! That describes the type of day its been :\ (as we all know by now. haha)

I haven’t been able to relax ALL day at all. Well, no, I take that back. My morning (pre-8:30) was relatively normal. I ate half a banana and went to the gym where I did 25 minutes on the elliptical machine and watched the Today show. When I got back I decided to switch to hot oatmeal again instead of cold muesli. I used 1/2 cup oats, 1/2 cup soymilk, 1/2 cup water, a spoonful of almond butter, a spoonful of brown sugar and the rest of my morning banana. I also had a plate of strawberries. It was quite yummy! Not having hot oatmeal for while makes me appreciate it all the more, I think.

And then I tried to blog. First the space key wasn’t working….then it was the “h” key, then the “n” key….and I got very frustrated and panicked and showered in a flash then took my poor macbook to the apple store (conveniently located next door at the mall) where they told me it needed an entire new keyboard but they were out of stock so I would have to, a) check the laptop in and wait a week til they got the part and could fix it or, b) drive over across town to the other apple store where they could fix it in a day. I chose the later so I raced across town (before work) to drop it off. The crazy thing is that I still made it to work at exactly 10:00!

For lunch, I packed the other serving of my pasta from last night with a side of more strawberries. I won’t repeat the pea incident since I think my lovely boyfriend mentioned that already in the previous post’s comments. Haha. I also had a yogurt for a snack.

And then when I got off work I raced home, changed, packed dinner to eat in the car and drove across town AGAIN to go pick up my computer from the apple store! I had to park super far away and it stormed like crazy so now I am soaking wet at school L. The good news is that I still managed to eat a healthy dinner tonight, showing that you CAN eat healthy when you don’t even have five minutes to your name. My original, pre-hectic plans, were to make homemade spicy turkey burgers tonight but I guess that will have to wait til tomorrow. Tonight I packed a large salad to go with greens, rotisserie chicken, dried berries, a sprinkle of goat cheese, a spoonful (1/4th cup) of hummus and half a tomato in it. I packed some balsamic vinegar on the side as well as a serving of kashi crackers and a banana. It worked and was very tasty!

I’m about to walk into class right now (I won’t be able to post this until later tonight though because the wireless is down at school right now—of course) and I have a practical! Tonight I have to temper chocolate, make crème anglais and make raspberry coulis. I’m hoping for an easy and an EARLY night since my day has been insane and I feel like I’ve gotten multiple cardio workouts in!! At least my mac is fixed and shiny and new (thank god for apple care!!!!!) and I’m full off of healthy yummy foods. I have some Annie’s bunnies packed later for a mid-practical snack.

    That sounds like a super hectic day! I hope you get the chance to indulge in some yoga, even if it’s just a couple sun salutations. 🙂

    Wow! What a day! I think it is awesome you were able to maintain healthy eating in such caos. I really struggle with that. You rock!

    That salad looks beautiful! Nothing I like better than rotisserie chicken, cranberries, and goat cheese. I bought some Maple Vinagrette at Whole Foods that is perfect…
    You made me hungry!
