Not Quite As Planned…

Well, our plans did not go exactly as planned today…but we are trying to make the best of the situation! First of all, Ryan is a HUGE Florida Gators fan. He went to school there and still remains a huge huge huge football fan. The gators are playing a championship game today in Orlando so we thought we could just go over there and find some cheap tickets somewhere after the game started. Wrong idea. We walked around for hours and never found anything. Good news = got exercise. Bad news = no game, now sitting on the couch watching it at my apartment. On the way downtown to the stadium we picked up Moe’s (burrito place) for lunch. I ordered a burrito “streaker” aka burrito with no tortilla. It was like a big taco salad that included tofu, lettuce, black beans, brown rice, salsa, a little bit of cheese and veggies. Pretty healthy–I actually looked up the nutrition facts on their website and it said my lunch was only 400 calories. Maybe that explains why I was hungry an hour later! I drank water while we searched for a ticket and then right when we got home I made an apple with peanut butter snack.

Ryan is leaving to go back to Tampa in a little bit and so I’m on my own for dinner. Don’t really feel like getting fancy tonight so I don’t know what’s on tap. I guess I’ll just wait and see what strikes me in a few hours!

After I was done…there was too much tofu in the salad so I left some!

This apple/peanut butter snack was about 175 calories.

    oh no!! so sorry that you were unable to get tickets to the game :0( but on a brighter note, looks like you had a great lunch and snack. I absolutely LOVE apple slices with nut butter – my favorite nut butter is hazelnut-butter :0)

    I have a question about your rice pudding recipes. How big is the serving?

    hi Trish!

    I believe that arborio rice pudding recipe makes about 1/2 cup pudding so each serving would be 1/4 cup. Not a lot at all and I was disappointed when I made it so I did some alterations to the recipe. The problem comes with keeping the calories low but at the same time increasing the volume of the rice by adding more milk. Next time I might use MORE rice initially but instead of using all milk to simmer it in, I would use a combination of half milk, half water (sort of like I do with my oats sometimes). Hope that helps-let me know how it goes!
