Now THAT’S a Veggie Burger

WOW is all I can to the burger joint that we just hit up. Seriously, this was not a normal burger place at all! The veggie burger was out.of.this.world!

I’m SO glad I went ahead and ordered my burger on greens instead of bun because my plate was loaded and everyone else was super jealous 😉

I also had a glass of pinot noir (finally!)

Ryan got a bison burger with so many toppings that I can’t even begin to explain them all….all I know is that there was a cheese sauce and a fried egg involved somewhere in the mix……

Needless to say, after all this food (and I ate it all…obvi) I was STUFFED. However, I knew there was raw vanilla macadamia nut ice cream in the freezer so I just haaaaad to try a tiny bit for dessert

It was amazing! The taste was the best part and even Ryan admitted to liking it. It had a different texture than normal ice cream (sort of a “grainy” feel??) but obviously that is just because all that is in this stuff is raw nuts, dates and vanilla bean (+ a splash of coconut water). Actually, the taste was BETTER than regular vanilla ice cream because this stuff was vanilla to the max from that $6 bean I bought just to make it. I wish I was hungrier and could enjoy it more but honestly I am just so stuffed that I want my elastic weight jammie pants on now! The ice cream was very very rich and dense and hard to believe that each serving was only 199 calories!

Alright, folks, I’m headed to bed now because I’m due up at 6:30 to head to my race! The race is in Thonotosassa, a small town about 30 minutes away from here. It actually starts at 8:30 but we have to be there by 7:30 for check-in and stuff. I’m excited that my mom and Margaret are doing it with me! I’m not really going for any sort of time goal tomorrow other than finishing under 30 minutes, just because I’ve never done a trail race before and really don’t know what to expect. I think it’ll be a lot of fun though and a new experience! Plus, it is professionally catered and that’s always nice!

I’ll be blogging before I go so look for a very early morning post with pre-race jitters!

    Wow, both your burger and Ryan’s burger looked great. I think buffalo/bison is so much better than beef.

    Love the burger, fries and ice cream!

    I have pre-race jitters RIGHT NOW! Aghh! Good luck in yours…say a prayer for me in mine…its supposed to pour down rain with massively strong winds. Why am I doing this again?
