Oatmeal Cream Pies with Cinnamon Buttercream Frosting

I think I have a cavity.

I have no idea why.

Can someone on here please remind me to make a dentist appointment? K thanks.

For right now though, let’s talk for a second about oatmeal cream pies. You know, the retro vending machine treat? I used to buy one after cheerleading practice on Wednesdays for the long bus ride home. After finishing every last crumb of cookie, I would sink low in my torn bus-seat and silently lick the plastic wrapper clean.

Yes, I had tons of friends in middle school. Why do you ask?

I hadn’t really given oatmeal cream pies a second thought since my last Sadie Hawkins dance, but I’m so glad I finally did.

These are kinda like oatmeal cookie whoopie pies, if you will, and consist of two small(ish) chewy oatmeal cookies sandwiched between a dollop of cinnamon buttercream frosting. They’re so good they make my teeth ache, and not just because I think I have a cavity.

You really should make these. Like, today. It just has to be done! I can’t be the only person at home with a kitchen full of oatmeal cream pie. We’re all in this together.

Oatmeal Cream Pies with Cinnamon Buttercream

makes about 18 pies

Print this recipe!

Ingredients:

1 stick butter, softened

3/4 cup packed brown sugar

1 egg

1 tsp vanilla extract

1 1/4 cup flour

1 1/2 cups old fashioned oats

1/2 tsp baking soda

1/2 tsp salt

1/2 tsp cinnamon

for cream filling:

1 stick butter, softened

3 cups powdered sugar

1/2 tsp cinnamon

2 tsp milk

2 tsp vanilla extract

Directions:

Preheat oven to 375.

Mix together the flour, oats, baking soda, salt and cinnamon in a large bowl. Set aside.

Cream together the butter and brown sugar. Add the egg and mix until smooth, then add the vanilla. Add the dry ingredients and mix until just combined.

Bake 1 tbsp-sized balls of dough on a lined baking sheet for 8-10 minutes, or until lightly golden. Let cool while preparing the filling.

For the filling, cream together the powdered sugar and butter until smooth. Add the cinnamon, vanilla extract and milk and whip on high speed for five minute until very light and fluffy.

To prepare cream pies, pipe (using a pastry bag or plastic bag) small dollops of frosting on a cookie and sandwich another cookie on top. Cookies will stay fresh in a sealed tupperware container for three days but they are best eaten the same day they are baked.

    these look awesome! I used to love those oatmeal cream pies when I was little. My Mom did not buy them much but I did get them from friends/vending machines. Those were always worthy of a lunchbox swap with friends!

    Wow, the name of these just drew me in — it’s like everything I like, in one delicious package. Whoopie pies are probably my biggest indulgence — everything about them feels homey and just unjustifiably rich, which is the BEST part 🙂 Definitely making these. May roll them in chocolate chips 🙂

    My Mom packed Little Debbie Oatmeal Cream Pies in my lunch everyday when I was growing up (interspersed with Little Debbie HoHos, Valentine Hearts, Christmas Trees, Star Crunch’s – you get the picture) and to this day I can’t even look at LD products in the store.

    These look sooo divine though and I especially love the Cinnamon Buttercream!!!

    these were in my lunch box in a regular basis growing up in PA….and yes, I do mean the homemade ones! What can I say….my mom is pretty cool!! 😉 We always wrapped them individually and froze them…best treat ever!

    Ohmygosh. I totally forgot those things existed until right now. I LOVED those things! There was a period during middle school when I would bike down to the corner store every weekend for an oatmeal cream pie and Orbitz (remember that pop with the floaty things?)

    I remember begging my parents to buy the box of oatmeal cream pies at the grocery store to pack in my lunches… let’s just say they subtly distracted me with something healthier instead. I bet a homemade version is wayyy better.. for health reasons as well as taste.

    I loved those when I was in jr. high and high school too! My house always had junk food snacks, I try not to have too many of these so I won’t make a whole batch but I could sneak into the convenience store and buy one for my road trip on Friday!

    I love how these don’t seem like they’d be *too* overly sweet like tradiationl cream pies due to the cinnamon possibly counterbalancing it. They sound wonderful!

    I literally whispered “Oh my god. These look amazing,” aloud when I saw this recipe in my google reader. It is a good thing my third graders were at gym.

    Alrighty, that is just too delicious…it conjured up memories of how my sister and I would save our allowance to go to 7-11 and buy a box of Lil’ Debbies b/c our mom didn’t allow us to have junk food (cookies, candies, chips, or soda) in the house. They were so soft and the cream frosting…oh boy!

    Will you post a recipe for homemade twinkies now? I’ve seen some recipes online, but I find myself always returning to your blog for recipes. 😉

    I made these last night! The buttercream is soooooo good. 🙂 Unfortunately, I made a huge mess since I was trying to use a hand beater in a too small bowl. Sometimes the clean-up is worth it–this is one of those times.
