Pancake and a Shot

Happy Monday!

It’s a gorgeous sunny day here in Orlando. I will never take it for granted again after last week’s fiasco! Today is a non-running day even though I reeeeally want to test out the Camel Bak :(. I know my body needs rest and I don’t want that old injury to flare up. I need to slowly build up my endurance and strength before I can more often.

This morning I made an oldie but goodie: an oatmeal pancake! I used 3 egg whites, 1/2 cup oats, 1 veeery ripe banana, 1 spoonful pb and some strawberries. It was very yummy!

I was rummaging through the kitchen today searching for coffee but couldn’t find any! I always drink coffee at work but since I only have like three days left of work I better buy my own and start cranking that coffee maker in the morning! This morning I settled for an illy espresso from my espresso machine. 🙂

I’m going to let my breakfast digest for about an hour then go to the gym for some back/chest/biceps and cross-training. See you for lunch!

ps–Does anyone know how to cook egg whites in the microwave??!!

edited to add: I just wanted to let yall know I am having the time of my life with this “Personal Trainer” from Runners World magazine.com!!!! They have a 10 day free trial and I signed up to train for an advanced 5K in 6 weeks just to get going before I start training for the half marathon. You put in all your info and they come up with a personalized training plan that includes weights and nutrition based on your preferences. It really is quite cool! I can’t stop playing with it!!! Does anyone else use this?

    Hi Jenna

    I just take a mug or a small bowl and spray with cooking spray and then crack the whites in. I nuke for 30 sseconds, check them, and then in 15-30 sec intervals untill done.

    Just be careful they dont explode!!

    egg whites in the micro are a sinch 🙂 I just crack desired whites into a ramekin and “nuke” for about 1 min. I’ll check on them after the first minute, and then usual cook in microwave for about 30 seconds longer.

    Eggs whites are easy in microwave but I have been informed that my kitchen reeks after I do it. 🙂

    The workout planner is quite cool—-they have a free trial but it’s only 5 dollars a month after that. I don’t think the diet program is worth it at all because it seems filled with processed and sugary foods and I ‘d rather dictate my own anyways….go to http://www.runnersworld.com and click on “tools” at the bottom of the screen click on personal trainer. It will lead you through a set up and then you get a 10 day free trial!

    I make quick and easy egg white burritos by sticking the desired amount in a small bowl and microwaving them for about a minute. Then I stick a few corn tortillas in the toaster oven for a few seconds, and sprinkle with some cheese, the cooked egg whites and some cholula hot sauce. So delicious!

    hey jenna, there is also a smart coach and training log which I have used on RW’s website! They are both free and figure out plans and workouts like tempo runs, long runs, etc.

    Microwave egg whites are so easy! I use a little dessert bowl, grease it with a little butter, pour in my egg whites and let ’em go for 30 seconds. Then stir and go at 10-15 second intervals until they are done. Easy and they taste just like poached 🙂

    Hi Jenna, just wondering what kind of espresso machine you have. Would you recommend it? I’m looking to get one but there are too many choices! Some seem to be really expensive but I’d rather spend a little more money than get stuck with a crappy machine. Thanks, have a great day!

    I just give my whites a good whisking til their nice and volumous (get the bubbles goin) and then pop it into a bowl with some canned salmon filet and some laughing cow (french onion = F.A.B.!!!) and about a tablespoon of chicken stock. Throw it in the micro for about 1 minute 30 secs and then keep putting it back in, with 15-30 seconds of running time until it’s done (interval training here… very serious 😉 ).

    Ohhh and I always sprinkle it with herbes de provence BEFORE microwaving…. Makes a huge difference and black pepper too! divine 🙂 t

    It’s easy. Spray Pam or something in a bowl and micro for up to a minute. Sometimes I stir them to make sure the stuff on the bottom gets cooked. They’re rise up really high while they cook but then they collapse.

    Never tried that runners world training plan, but it sounds pretty good!

    I love the RW website! I’m on there wayyy too much. I don’t use the personal trainer, but I do log all my runs on the cool little training log (free).

    Hey Jenna, is the health food market where you get the veggie chips and wrap in Tampa called Village Health Market? My husband and I got take-out for a picnic there on Friday night and when I saw their veggie chips, I was like “hmm, I think this is Jenna’s place!” I strained to remember what I saw next to those chips on your plate, and I think I ordered your entree (if that was indeed the right place)–the hummus and tabouli wrap with kale. If that’s not “your” place, you should go anyway and get that–it’s to die for! If it IS your place, I have to say that I basically LOVE your tastes! (Well, that’s true anyway–every time I try a recipe you post, I enjoy it!) I’d love to hear some Tampa restaurant reviews or recommendations if you ever have time (but seriously only if you have time! I know you are REALLY busy right now!)

    Yep!!! That’s “my” place! I pretty much looove and recommend anything and everything there and it’s pretty affordable as well! I will do more reviews for Tampa once I actually move to tampa and can explore more food options there! 🙂

    Hi Jenna, I’m new here and just wanted to say I love your blog. That pancake looks so good. I’m not the one who really cooks around here (hubby does) but I would like to try my hand at that pancake. Are the only ingredients you need to make that pancake the oats and egg whites? Thanks!

    Angie,
    Here’s what I do:

    The night before mix together 1/2 cup old fashioned oats with 3 egg whites. Let sit in fridge overnight.

    The morning of, add 1/2 tsp baking soda, 1/2 of a mashed banana and a pinch of salt. Cook for about 2 minutes per side.

    I top mine with about a tbsp of almond butter and the other half of the mashed banana.

    It tastes great, is filling and has about 21 grams of protein!

    Agreed, I totally love the Runners’ World site, and the magazine, too!
    The “Personal Trainer” tool is definitely pretty cool, and they also have some good dinner recipes that I’ve tried and enjoyed in the past.

    I’m also working with their half-marathon training guide, but yet to get officially started. I haven’t yet signed up for a half, just a bunch of 5Ks for fun, so now I’m off to be searching for a nearby 1/2 sometime this fall.

    hahah, it’s been such a while since I’ve had an oatmeal pancake, I decided I’d whip up a mini one as part of lunch…breakfast for lunch, Yes ma’am 🙂

    I would LOVE to to more videos, the only problem is I have to find someone to tape me!! Maybe if we can find time this weekend, I can get Ryan to tape me in the upstairs gym doing some arm exercises. I promise it will be one of these days, it’s just hard right now when I don’t live at home so he can’t tape me anytime! When I move back home, expect a ton more videos!

    Jenna, i am a runner i think you know but i never follow any training programs and i am reading more and more that people do!! Now i see you are!! Do you think a training program is a good idea? I am running a 10K in sept and i am wondering if i should have followed some sort of program???

    Hi Jenna,
    I made the pancake this morning and it was so tasty. I totally forgot to put strawberries on top and I mixed the peanut butter and other 1/2 of banana together before putting it on the pancake but it still worked well for me. So yummy and I thank you for helping me with the instructions. I’ll definitely make this again.
