Hello and happy Thursday!

Thank you all for your encouraging sleep comments last night—-I ended up falling asleep at 7:45 and sleeping like a baby until 3:15 so that was good!! I feel SO much better today. Its crazy what a few more hours of sleep can do!!

This morning I snacked on this bar pre-breakfast:

I bought this by mistake—-I really meant to grab the cinnamon roll! It was okay. Not my favorite. I don’t really like the fruit/chocolate mix and I could definitely taste the dates in here. It did a great job of giving me early morning energy though so I’m not complaining!

And then around 7:45, I took my breakfast break. I ate the “heart healthy portion” of oatmeal today, which is 3/4th cup dry. I did this for a few reasons. Number one being that we were out of milk and I knew 1/2 cup of oats made with water won’t fill me up. Also, I needed it to get me through the next 5 hours. And it did!!! My whole bowl contained 3/4th cup oats made in 1 1/2 cups water, 1 spoonful pumpkin seed butter and a cinnamon brown sugar mix.

It was an awesome breakfast and I felt full and satisfied for the next 5 hours from it! Maybe the secret is eating MORE?! It worked well and I’ll be doing it again in the future!

My mom came in today to do her grocery shopping and she bought a loaf of the 9 grain bread that I had literally seconds before pulled out of the oven. I made a killer sandwich for lunch with it when I got home—-boar’s head pastrami spiced turkey, boar’s head provolone and spicy hummus:

The bread is organic of course and contains a yummy mix of heart healthy grains. Its SUPER soft and delicious!

This afternoon I actually am doing a little more baking. My mom’s friend Margaret has a six year old daughter that looooooves to bake and for christmas she got this mini cupcake set. And…she asked yours truly to help her make the cupcakes! I’m obviously happy to be a part of it, mainly because she is just so cute! I’m going over to her Aunt’s house in an hour and we will be creating “cupcake bouquets” (I need to read the kid friendly directions first!) all afternoon.

I’m hoping to be home by 4 to do some yoga and then my mommy is making my FAVORITE chili for dinner. I grew up eating it and it always is so nostalgic and yummy to me! Recipe to come tonight! 🙂

    SO MANY WONDERFUL THINGS TODAY! 🙂 I always eat that much oatmeal, girl!! 😉 (unless I’m having two bowls in one day which happens frequently… 🙂 )

    Pastrami, provolone, and hummus? Man that sounds AWESOME! I think I would like that sandwich toasted/smashed in a pan so the cheese got all melty. Yuuuum.

    So funny you don’t like the chocolate coconut chew flavor of Larabar – it’s my favorite one!! I was excited when you bought to see if you like it. I think it’s the most non-date tasting one! Oh well – to each their own! Glad you got more sleep last night – what a relief, huh? Enjoy your cupcakes!

    Hey Jenna,
    Sounds like your adjusting to your schedule. Glad you got more sleep. I’m all for the big breakfast. I usually don’t have time for a morning snack, and I need to stay fueled until lunch. I used to skip breakfast and just drink coffee. I would be so famished by lunch…don’t know what I was thinking. I’m so much happier when I get a good meal in my belly in the AM.     Mini cupcakes are fun to make! Have you checked out Vegan Cupcakes Take Over the World? Such great recipes! Mine never look quite as pretty as the pictures in the book, but I’m sure you’d be able to look picture perfect thanks to your pastry background 🙂

    Hi Jenna,
    I had a question about the oatmeal (I assume it’s the same thing as porridge in New Zealand, anyway!), which I’ve recently started eating for breakfast instead of cereal and fruit, and thought I’d take the opportunity to ask on a semi-related post, since you seem like the most approachable of the food bloggers on my reader. (Flattery, flattery! 🙂 But truth!) I’ve been making the porridge with 1/2 cup organic rolled oats, a couple of handfuls of muesli mix (jumbo rolled oats, flax seeds, sesame seeds, pumpkin seeds, dried apricot, mango and papaya, I think), and 3/4 cup milk, buzzed in the microwave for about two and a half minutes in increments. And it’s delicious. 🙂 Only I’ve been struggling with a rash that’s appeared on my face in the past year or so, that I think must be a food allergy only I’ve had no luck in ascertaining what’s causing it so far, and very recently I’ve started getting a weird stomach ache after breakfast. I’m starting to wonder if I’ve become intolerant to dairy and if it’s the milk I have with breakfast that’s causing the problem. As of tomorrow, I thought I’d better try the porridge without the milk and just make it with water instead – does that change the taste and texture significantly? It feels silly to ask if something will be “watery” when you ARE adding almost a cup of water to it, but is it still comparable to the oats made with the milk? Thanks!

    Hey Jenna! I was just wondering about your pumpkin seed butter. Is it like peanut butter? What are the nutrition stats on it if you don’t mind my asking and where do you get it? It sounds really good!

      Actually Miss VeggieGirl sent me this as a gift and I just love it! I’ve never seen it anywhere though so you might have to order it online or ask her where she gets her supply. The only ingredients in it are roasted pumpkin seeds. Its incredibly nutritious and has 160 calories per 2 tbsp and 10.5 grams of protein as well!!!!!!! Amazing, huh?!?!! Its the best stuff ever. I’m going to have to order more very soon!

      i would definitely change up and try with water to see what happens! It sounds like you might have an allergic reaction to the milk or maybe the mango, actually. Mangoes are one of those “fast and coming” food allergies that is on the rise today. I would nix the milk and mango and see how you feel! As for being watery—–not at all. I put water in my oats today and they were great. Milk lends creaminess but water is a great alternative! The combo sounds delish–can I share??!!

    Glad you are feeling better today! I recently tried the coconut chocolate Larabar and I wasn’t blow away by it either. The kind I really want to try is peanut butter cookie…and now, since you mentioned it..Cinnamon Rol!! yummmm!

    What fun! Children can always make these interesting and exciting! (especially for those that don’t have them…and her mom probably enjoys the wee break! ha ha!)

    Your bread looks absolutely beautiful! Sounds like you’re beginning to settle in a new routine. Great work! I miss having stores like yours to get all my healthier items at.
