Dinner/ Lunch

Round Two

Hi everyone!

I’ve relaxed and laid low this morning as much as jenna-possible, since I typically am very go-go-go. I laid around for a little while, threw some my uniforms in the wash and then headed out to run some errands. While I was out, I stopped at Publix to pick up something to make for lunch. Now, normally, I would just eat whatever I have since I’m going grocery shopping tomorrow……but I felt like since I have such a long day/night ahead of me, I needed a little something special!

So, I picked up whole wheat pitas, organic part skim mozzarella cheese, tomato sauce, broccoli and a tomato to make a pita pizza before work! This is such a great (and healthy!) way to get your pizza craving met….along with a serving of veggies 🙂

This lunch pretty much rocked my world. I think I will be eating a lot more of pita pizzas from now on. When heated, the pita gets all chewy and the cheese gets all gooey…… 😉 SO freakin’ good!

While at Publix, I found my to my delight that they had restocked the Maple Nut Clif Bars!!! I bought another one for work tonight. I also bought a Fuze and a huge bottle of Smart Water. And for dinner tonight, I really am going to eat that Kashi Lemongrass Coconut Chicken meal. Its still safely in the pastry freezer waiting for me! I will give you my full review on it later…I can’t wait to try it! I try not to eat too many frozen meals but sometimes its the best alternative (such as when you work 10 hour shifts). I’m bringing a huge honeycrisp apple to enjoy with it and plan to gobble down the clif bar as a snack during the evening.

Tonight is guaranteed to be crazier than last night when I got off easy since we were so slow! The good news is that since we were slow, I got a ton of work done so today I can just focus on getting all my prep ready for tonight’s service. I still have to bake the usual 400 rolls, focaccia and cookies, but I should be in good shape with pies. Tomorrow is my long awaited day off!!!!!!! I think instead of the 8:00 church service, I will go to the 10:30 one so I can attempt to sleep in. Then, its grocery shopping, exercising and I think I’m going to do some cooking!

    Hey Jenna – I’m curious. What kind of job do you want once you’ve finished your externship? Would you like to be a pastry chef at a restaurant or club like this or do you want to work in a bakery or a hotel…?

    I’m working on a book right now and being a writer is my main goal….I’m looking around at different editorial positions at newspapers and magagzines. I really do not want to work in a restaurant—my goal is to write, not to cook! I went to culinary school so I could really understand and “know” food in order to write about it. I never had any intention of being a chef….except for at my own house! Hehe 🙂

    Hi Jenna,

    I just found your blog this week (I think it was thru Back in Skinny Jeans, but I can’t say for sure, I was linking all over the place!) Anyway, I LOVE your blog!! My husband and I are foodies up in Ohio and tho he’s an engineer, I think Scott will end up being a nutritionist or some kind of counselor in nutrition. He’s the guy in the office that everyone goes to for food advice. We both love food and have made a commitment to really eat healthy, organic, REAL food. Just wanted to say “hi” and that I really relate to you (we both run, as well) and I just love your positive energy!     Jenna–you are such a trooper! Don’t think it goes unnoticed how incredibly hard you are working at both your demanding job AND your blog. Your energy and attitude are inspirational–keep it up! Can’t wait to see what you cook up tomorrow.

    To heat your pita pizza, did you put it in the oven? A while back I used to make pesto pita pizzas with pesto sauce, sun dried tomatoes, toasted pine nuts and mozzarella cheese. You just reminded me how tasty they were!

    interesting about your book! My main goal is to write too- but i train (well, because i love it) but so I can know the indistry inside and out.

    I guess you could call it research?

    I love pita pizzas! My husband (then boyfriend) used to make them for dinner in college…so good! Good luck tonight, I can’t wait to see more pictures of your beautiful desserts!

    Wow, Jenna, I didn’t realize writing was your main goal either. That’s great! I started out writing for an area newspaper by doing it for free, and then they liked my work and asked me to write for pay. So that’s just a little tip for you. What type of book are you working on?

    I love the maple nut cliff bar! i usually like the chocolate flavor, but the maple nut bar has that sweet taste. The Oatmeal Raisin flavor is pretty good too!

    Oh my word…I tried honeycrisp apples the other day and they are SO good. My frugal nature had to go by the wayside and buy them even though they were 2.89 a pound! AND I tried Oikos today…it is so good! Just wish I could get Chobani!

    Thank you!! As for the pita pizza, I initially started to broil it and then got really hungry waiting so I took it out and zapped it in the micro for 30 seconds! I’m all about instant gratification I guess… I steamed the broccoli lightly before topping the pizza with it!
