Happy Tuesday everyone!

I’m feeling much less stressed this week because I got my schedule for work and I got Thursday off, which means I have a whole day during the week to catch up on stuff that needs to be done like cleaning and working on a report for my class that is due on Friday. As for today though, it’s off to work and school again and I’m proud to say that Dexter was a good kitty last night and slept half the night on the bed and half the night under the bed again.

When I got up this morning, I ate half a banana with almond butter then went to the gym to have an upper body workout. I started off by running for 5 minutes on the treadmill just to warm up, then I did lateral arm raises, the fly machine, triceps, chest press, a few more random arms machines and ended with some abs for another 30 minute workout. 30 minutes is all I really have time for in the morning, plus the gym I workout in (my apartment gym) is super tiny and there just isn’t that much to do. You have to get creative!

When I got back, I made HempPlus waffles for breakfast with some walnuts, maple syrup, the other half of my banana and a mango. It’s randomly cold outside and this warm/sweet breakfast was just what was needed!

I’m craving pb&j today but don’t have peanut butter so instead I packed an almond butter and raspberry preserves pita for lunch. I used about 1.5-2 tbsp almond butter, raspberry jam and a whole wheat pita. I’m also bringing an apple to have with it.

For a snack I’m packing one of my favorite treats—a Luna tea cake! These are SO good! I am seriously addicted. I tried the chocolate mint the other night and fell in love. Seriously.

There are no pictures from school last night because we didn’t take anything home. We made baklava, ice box cookies and linzer cookies, all which have to sit in the fridge overnight. Expect a ton of photos tonight though as we finish off all those!

    SO glad that you’ll have Thursday off from work – you deserve it!! As for today – don’t worry, work and school will fly by! Hopefully, haha.

    Have you tried the vanilla macadamia nut tea cake flavor? It sounds so good and I’m wondering if I should give it a try.

    Kristen- the vanilla macademia is my absolute favorite kind! Definitely try it.

    i love luna tea cakes too, but noticed that the nutrition stats are not that impressive…lots of carbs and not that much protein..did anyone else notice that? just curious to see what others think! but yeah, they are GOOD.

    I’ve tried two flavors of the tea cakes and orange blossom is my fave…I bought the vanilla macademia thinking it would be good and i didn’t particularly care for it and i hate anything mint esp. chocolate and mint so i didn’t buy the third variety but the orange blossom flavor is yummy and actually filling for a light snack.

    Nadia, there are actually 4 flavors of those Luna Tea Cakes – pomegranite berry is another flavor and it’s really good (but Orange Blossom is still my favorite). I think the nutritional stats are fine for an occasional snack if you look at the total picture – they have pretty good vitamin stats (esp potassium, vitamin C and vitamin E) and a good calorie/fat ratio.

    Yes, yes, Luna Tea Cakes are SO good! I LOVE the chocolate mint ones. I keep wanting to try the other flavors but every time I go to buy one, the chocolate mint tempts me away from trying its other flavor buddies. They are that good!

    I love luna tea cakes too especially the pomegranate blueberry! I had the orange one yesterday but I havent tried the mint one yet. hmmm guess I’ll have to go the store today 😉

    Arg, the mint ones are so hard to find, that’s probably why some haven’t seem them! I love those and the chocolate peppermint stick luna bars (full sized) as a great dessert. Plus, they have all the vitamins and minerals!

    I’ve never heard of LUNA teacakes. They sound amazing though! Woo HOO for having a day off- those are the best 🙂

    Wow, those waffles look AMAZING! I mean, take something simple like waffles and add those yummy toppings, and WOW!

    Haha I’m always the odd one out – I HATE the tea cakes! AND Lara bars! Oh well – more for you guys I guess!

    I like some flavors of Lara bars, but I bit into then promptly spit the cherry pie one out. It was not very good at all. I do really like cherries, but this one was gross to me.

    Jenna I’m curious to see how your almond butter on the pita holds up. Everytime I’ve tried nut butter on a pita it melts all gross and leaks etc. It tastes great but hard to eat! I think its something about the pita not absorbing the nut butter. Anyways enjoy and have a great day!

    Has anyone found the Luna tea cakes in Canada? I’d love to try them, they look amazing, but I’ve only ever found the bars so I’m wondering if they’re even sold here.

    those waffles look amazing!

    All the talk about carrot cake cupcakes in previous posts made me want to make carrot cake oatmeal cookies! unfortunately, no such recipe existed because I wanted to make them vegan! Here’s the recipe. They turned out tasting GREAT.

    2 tablespoons oil
    2 tablespoon applesauce (unsweetened)
    2 overflowing tablespoons pineapple juice (from the canned pineapple used later in recipe)
    1/2 cup unrefined sugar
    1 slightly heaping cup flour
    heaping 1/4 teaspoon baking soda
    1/4 teaspoon baking powder
    1 teaspoon ground cinnamon
    1/4 teaspoon salt
    1 cup oats
    1 large carrot, grated
    1/2 cup drained canned pineapple tidbits.

    First, mix oil, applesauce, pineapple juice and sugar

    In another bowl, mix flour, baking soda, baking powder, cinnamon, salt and oats.

    Mix the dry ingredients into the wet ingredients, fold in shredded carrot and pineapple.

    Bake in an oven preheated to 350 F for about 12-15 minutes.

    My batch made 10 cookies

    i love tea cakes too! and somehow they always seem to hold me over for at least three hours…which is surprising! for me, they hold me over longer than a kashi bar but a little less than a full luna bar!
